It appears in the British Pharmacopoeia, the European Pharmacopoeia, and virtually every traditional European herbal dispensary for digestive use.
Licorice Root (Glycyrrhiza glabra) has been used as a botanical ingredient across Asia, the Middle East, and Europe for thousands of years. It is one of the most widely consumed herbal ingredients in the world — in Traditional Chinese Medicine it is called the "great detoxifier" and is added to blends as a harmonising and sweetening agent. In this blend it plays both a flavour role — its natural glycyrrhizin content makes it approximately 50 times sweeter than sugar — and a traditional digestive tonic role, helping to soothe the gastrointestinal tract alongside the peppermint and fennel.
Peppermint (Mentha piperita) is a naturally occurring hybrid of watermint and spearmint, first documented in England in the late 17th century. It contains a high concentration of menthol — the compound responsible for its characteristic cooling sensation — and is listed in the European and British Pharmacopoeias for digestive use. Add one heaped teaspoon to a teapot or infuser. Pour freshly boiled water over the blend and steep for 5–7 minutes — the fennel seeds and licorice root benefit from a longer steep to release their full character. Cover during steeping to retain the aromatic oils from the peppermint. Strain and enjoy. The blend has a naturally sweet, cooling, and mildly anise-flavoured profile with a peppermint brightness. Store below 23°C in a dark, airtight container.
