Certified Organic Hibiscus Flowers (Hibiscus sabdariffa) — whole dried calyces of the Roselle plant, one of the most widely used herbal tea ingredients in the world and one of the most visually striking. Hibiscus sabdariffa, commonly known as Roselle, is a tropical annual in the mallow family native to West Africa and now cultivated across Africa, Asia, and the Caribbean. It is the calyx — the fleshy, crimson sepal structure that forms around the seed pod as the flower fades — that is dried and used in food, beverage, and colourant applications. The calyces are responsible for hibiscus tea's remarkable deep crimson colour, intense tartness, and the flavour profile often described as resembling fresh cranberry with a sharp, clean citrus-like acidity.

The crimson colour is produced by naturally occurring anthocyanins — the same class of water-soluble pigments responsible for the deep colours of blueberries, red cabbage, and blackcurrants — making hibiscus a highly effective natural colourant as well as a flavouring ingredient. The brilliant crimson colour of hibiscus tea comes from anthocyanins — a class of naturally occurring water-soluble pigments responsible for the deep red, purple, and blue colours in many plants including blueberries, red cabbage, blackcurrants, and cherries. In Hibiscus sabdariffa, anthocyanins are present in the calyx at high concentration — among the highest of any commonly used food plant — which is why even a small quantity of dried hibiscus produces an intensely coloured brew. The colour is pH-sensitive: in acidic conditions (which hibiscus already provides due to its high citric acid content) the colour is a vivid ruby-red; in more alkaline conditions it shifts toward purple. This makes hibiscus an effective natural food colourant across a range of applications beyond tea.
Hot tea: steep 1–2 teaspoons (approximately 2–4g) of dried hibiscus flowers in freshly boiled water for 5–10 minutes — the longer the steeping, the deeper the colour and the more pronounced the tartness. Strain, then sweeten to taste with honey, sugar, or stevia if desired. Hibiscus tea is very tart straight — sweetening is typically required for most palates. Iced tea: brew at double strength (double the hibiscus, same water volume), steep for 10 minutes, strain, sweeten while hot, then allow to cool before pouring over ice. A squeeze of lime or a fresh mint sprig complements the tart, fruity character exceptionally well. Cold brew: steep 2 tablespoons in cold water overnight in the refrigerator — produces a beautifully coloured, smooth, less astringent result. Hibiscus is also excellent blended with rose hip, berry fruits, apple, and citrus peel in tea blends.
Beverages: hibiscus is one of the most versatile natural colourant and flavouring botanicals for drink applications — used in herbal teas, iced tea blends, cordials, sparkling water flavourings, cocktail mixers, and kombucha. Confectionery: fold into marshmallow, Turkish delight, panna cotta, and jelly for natural colour and tart fruit flavour. Syrups and jams: hibiscus syrup is a widely used cocktail and beverage component; hibiscus jam and curd are well-established. Baked goods: use the strained infusion as liquid in cake and muffin recipes; whole dried petals as decorative edible inclusion. Natural colourant: hibiscus anthocyanins provide a clean-label natural red/crimson colour across beverages, confectionery, and dairy applications — an increasingly in-demand alternative to synthetic red colourants.
Hibiscus has an intensely tart, bright, fruit-forward flavour — clean, sharp acidity reminiscent of cranberry or redcurrant with a floral, slightly fruity undertone. It is not naturally sweet — the tartness is dominant and requires balancing. Pairs exceptionally well with: rose hip (complementary tartness, similar colour), lemon and citrus (amplifies the brightness), apple and berry fruits (rounds the tartness with sweetness), ginger (adds warmth and spice), cinnamon (warm spice contrast), rose petals (floral complement), and mint (refreshing contrast). In culinary applications it pairs well with dark fruits (blackberries, pomegranate), vanilla, and chocolate, where the tartness cuts through richness. Hibiscus is one of the most reliably crowd-pleasing herbal teas when properly sweetened — the vivid colour and clean, fruity character have broad appeal across age groups.
