Cacao nibs are the inside of the cacao bean — the cacao bean, once fermented and dried, is roasted (or kept raw), then the outer husk (shell) is removed and the inner bean is broken into small, irregular pieces. These pieces are cacao nibs: pure 100% cacao with nothing added. Every chocolate bar you have ever eaten started as something very close to this — the difference is that commercial chocolate has been conched, refined, and blended with sugar, dairy, and emulsifiers until it is smooth, sweet, and meltable. Nibs are cacao in its most direct, unprocessed form: intensely chocolatey, bitter rather than sweet, crunchy rather than smooth. The flavour is complex and multi-layered — particularly from Peruvian fine-flavour cacao, which can have distinct fruity, floral, and nutty notes alongside the deep chocolate base.
Think of cacao nibs as an unsweetened, crunchy, intensely chocolatey substitute for chocolate chips — they work anywhere chocolate chips would work, providing the chocolate flavour and texture without added sugar. Baking: fold into muffins, cookies, banana bread, brownies, and granola bars — the bitterness balances beautifully with sweetness from the batter. Breakfast: sprinkle over smoothie bowls, oatmeal, yoghurt, and granola for crunch and chocolate flavour. Trail mix: combine with nuts, seeds, and dried fruit for a no-added-sugar trail mix. Yes — cacao beans naturally contain caffeine, along with a related alkaloid called theobromine. Both are stimulant compounds, though theobromine has a milder, longer-lasting effect than caffeine. Cacao nibs contain approximately 230–280mg of theobromine per 100g and approximately 50–70mg of caffeine per 100g — so a typical serving of 1–2 tablespoons (10–20g) would contain roughly 5–14mg of caffeine (well below a cup of coffee, which typically contains 80–150mg). Individuals sensitive to caffeine or theobromine, or those limiting caffeine for health reasons, should factor this into their usage. Cacao is not suitable for pets (dogs, cats, and other animals can be highly sensitive to theobromine).
The terms are used inconsistently in the food industry, but a general distinction is accepted: Cacao typically refers to the raw or minimally processed product from the Theobroma cacao bean — raw cacao nibs, cacao powder (cold-processed), and cacao butter. Cocoa typically refers to more heavily processed products — conventional cocoa powder is usually produced by pressing the fat out of the roasted bean at high temperatures (Dutch processing often involves alkalisation), which can change the flavour profile and nutrient composition compared to less-processed cacao. In practice, the terms are sometimes used interchangeably on product labels and there is no regulated definition distinguishing them in Australia. These nibs are certified organic, minimally processed, and labelled as "cacao."
Store cacao nibs in a sealed, airtight container below 23°C in a cool, dark location — away from direct sunlight, moisture, and heat. Cacao nibs have a high fat content (approximately 49% fat by weight) from the naturally occurring cocoa butter within the bean — this fat can absorb odours from surrounding foods if stored in an unsealed container, so an airtight container is important for maintaining flavour quality. Under correct storage conditions, shelf life is 2+ years. Refrigeration is generally not necessary and can introduce condensation on opening, but is acceptable for very long-term storage if the container is fully sealed. Do not store near strongly aromatic spices or other pungent ingredients.
