It refers to cacao that has been minimally processed — typically lightly roasted and stone-ground into a paste with the natural cacao fat (cacao butter) left intact, rather than pressed out as happens with conventional defatted cocoa powder. The result is a richer, more full-bodied product made from higher-quality bean selections, with a more complex flavour and a noticeably different texture to standard cocoa. It is simply a minimally processed, full-fat cacao food ingredient.
The primary difference is fat content and processing intensity. Standard cocoa powder has most of its natural cacao butter hydraulically pressed out — typically retaining only 10–12% fat — producing a dry, light powder that dissolves easily but lacks depth. Ceremonial grade cacao retains the full natural fat content (around 50–55% by weight) from the stone-grinding process. This fat content is what produces the characteristically rich, creamy, full-bodied mouthfeel when prepared as a drinking cacao. It also means ceremonial cacao behaves differently in recipes — the retained fat reduces the need for additional butter or oil in baking, and produces a noticeably richer result in raw confectionery and chocolate sauce applications.
Finely chop or grate 20–30g of the cacao paste. The retained fat content means the cacao needs a little more encouragement to combine with liquid than standard cocoa powder. Best method: combine the chopped cacao with a small amount of hot water (approximately 70°C — not boiling, which can produce a more bitter, less complex result) and whisk or blend until smooth. Then add warm milk or a plant-based alternative and whisk until fully combined and slightly frothy. Optional flavour additions — a pinch of cinnamon, a small amount of chilli, vanilla — are a matter of personal taste and are not required. The full-fat cacao produces a naturally rich, velvety drink without needing any cream or thickener.
Baking: incorporate into brownies, cookies, and cakes — the retained fat content can reduce the amount of additional butter or oil required. The deeper, more complex flavour produces a richer chocolate result than standard cocoa. Raw desserts: a core ingredient in raw chocolate, bliss balls, and no-bake slices — the cacao butter content means it sets at room temperature when combined with coconut oil and a sweetener. Homemade chocolate: melt and combine with coconut oil and your choice of sweetener for simple moulded chocolate. Smoothies and shakes: blend into smoothies and protein shakes. Mole and savoury sauces: a traditional ingredient in Mexican mole sauce where cacao's bitterness balances chilli and spice.
