Yerba Mate (Ilex paraguariensis) is a species of holly native to the subtropical rainforests of South America — principally Paraguay, Argentina, southern Brazil, and Uruguay. Its dried cut leaves and stems have been consumed as a caffeinated infusion by Indigenous Guaraní people for centuries and the ritual of sharing mate from a gourd through a metal bombilla straw remains one of the most significant cultural traditions in South America. It is consumed daily by tens of millions of people across the region and has a rapidly growing global following.
Green yerba mate has a bold, earthy, bittersweet, and herbaceous character — often compared to a very robust green tea but more vegetal and with a distinctly bitter, slightly astringent finish. The aroma is fresh and grassy. The flavour mellows noticeably with subsequent re-infusions — the first cup is the most assertive, while later refills become progressively softer and more nuanced. For a smoother profile, the Roasted (tostado) or Aged varieties are worth exploring.
Yes — Yerba Mate naturally contains caffeine, along with theobromine and theophylline. The caffeine content varies with preparation, water temperature, and steep time. This is not a caffeine-free product and is not suitable for those who need to avoid caffeine entirely.
Traditional gourd method: Fill a gourd half to two-thirds full, tilt to slope the leaves, cool-water prime the empty space, insert the bombilla, then add water at 70–80°C (not boiling). Sip and refill repeatedly. French press: Use 1–2 tablespoons per cup of 70–80°C water, steep 3–5 minutes, press, and pour. Infuser or teapot: Use a fine-mesh infuser with the same ratio and temperature. Always avoid boiling water — it scorches the leaves and extracts excessive bitterness.
