Aged mate (estacionado) has been rested for 12–24 months, which mellows its acidity and bitterness while developing a deeper, woodier, more refined character. As the base of a blend that includes the mildly bitter Ginkgo biloba and earthy Bacopa, the smoother aged mate integrates the botanicals more harmoniously than a sharp green mate base would. The result is a more balanced, drinkable cup — the aged mate sits back and lets the botanical complexity come forward rather than competing with it.
Ginkgo biloba is one of the oldest living tree species on Earth — a botanical relic unchanged since the Jurassic period, with fossils dating back 270 million years. Native to China, it has been used in Traditional Chinese Medicine for over 5,000 years, with the leaves consumed as a tonic botanical associated with cognitive vitality and circulation. It is now one of the most widely sold botanical ingredients in the world and is a mainstream herbal medicine in Germany, where standardised ginkgo extract is extensively researched and used. It has a mildly bitter, slightly astringent flavour.
Bacopa monnieri — known as Brahmi in Sanskrit — is a creeping aquatic herb native to the wetlands of India, Nepal, and Sri Lanka. It has been used in Ayurvedic medicine for over 3,000 years and is classified as a medhya rasayana herb — a category specifically associated with nourishing the mind and nervous system. In Ayurveda, Brahmi is described as a tonic for intellect, memory, and alertness and appears throughout classical Ayurvedic texts including the Charaka Samhita. It has a mildly bitter, slightly sweet flavour. Also widely used as a culinary herb across South and Southeast Asia.
Lemon Myrtle (Backhousia citriodora) is a tall flowering tree endemic to subtropical Queensland, Australia — it grows nowhere else on Earth. It contains the highest known natural concentration of citral of any plant, giving it an intensely pure, bright, clean lemon fragrance that surpasses the lemon fruit itself. In this blend it plays both a flavour and aromatic role — cutting through the earthy depth of the aged mate, ginkgo, and bacopa with a fresh, uplifting citrus top note that makes the cup significantly more approachable and aromatic. It also adds a distinctively Australian botanical dimension to a blend rooted in South American, Chinese, and Indian botanical traditions.
Yes — the Aged Yerba Mate contains naturally occurring caffeine. Ginkgo biloba, Bacopa, and Lemon Myrtle are all caffeine-free. The overall caffeine level per cup will be lower than plain aged mate due to dilution across the four-ingredient blend, but this remains a caffeinated product. Not suitable for those avoiding caffeine entirely.
Add 1–2 teaspoons per cup. Use water at 70–80°C — not boiling. Steep for 4–6 minutes to allow the ginkgo and bacopa to infuse fully alongside the aged mate. Strain and enjoy. The lemon myrtle aroma releases quickly; the aged mate and botanical herbs benefit from the fuller steep time. Can be re-infused once for a lighter, more citrus-forward second cup. Store below 23°C in a sealed, dry, dark container.
