Our Organic Aged Yerba Mate (*Ilex paraguariensis*) is a premium South American tea known for its unique ability to offer the "strength of coffee, the health benefits of tea, and the euphoria of chocolate." Unlike green, unaged varieties, our Yerba Mate is aged for 12 to 24 months. This seasoning process allows the leaves to develop a rich, tawny olive colour and a sophisticated flavour profile that is smoother, woodier, and significantly less bitter than fresh harvests. It contains a natural balance of caffeine, theobromine, and theophylline, providing a sustained energy boost without the crash.

Directions of Use

Yerba Mate is incredibly versatile. You can brew it traditionally or like a standard loose-leaf tea.

1. Traditional Gourd (The Ritual): Fill a gourd 3/4 full with herb. Shake to bank the leaves to one side. Insert the bombilla (filtered straw). Pour cool water into the gap to protect the nutrients, then top up with hot (not boiling) water (70-80°C). Sip and refill.

2. French Press: Use 2 tablespoons of herb per cup of water. Pour over hot water (80°C) and steep for 4-6 minutes. Press and serve.

3. Mate Cocido (Tea Pot): Brew in a teapot with a fine mesh infuser for a lighter, tea-like drink. Add lemon and honey to taste.

4. Iced Mate (Tereré): Brew strong, sweeten with agave or honey while hot, let cool, and serve over plenty of ice with fresh lime and mint.

In Spanish, aged mate is called estacionado — from the word for "seasoned" or "rested." After drying and initial processing, the leaves and stems are stored in controlled conditions for 12 to 24 months before milling and packaging. During this period, volatile acids mellow, chlorophyll gradually breaks down (giving the leaves their characteristic tawny-olive colour), and woody, complex flavour notes develop. The result is a significantly smoother, more refined mate than freshly dried green product — lower acidity, reduced bitterness, and greater depth of flavour. Aged mate is the preferred style in Argentina and Uruguay, where the most discerning mate drinkers primarily consume estacionado.
Con palo means "with stem" in Spanish. Yerba mate is available in two main formats: con palo (leaf and stem) and sin palo (leaf only). The stem inclusion moderates the strength and bitterness of the infusion — the woody stem material absorbs water and dilutes the more intense leaf extraction, producing a more balanced, less aggressive cup. It is the traditional Argentinian and Uruguayan style and is considered by many practitioners to be the authentic preparation format for gourd brewing. Sin palo (stemless) tends to be stronger and more intense.
The fine powder — known as polvo — is a natural and intentional component of traditional loose-leaf yerba mate, not a quality defect. In gourd-and-bombilla preparation, the polvo plays an important functional role: it acts as a fine barrier within the gourd that helps the coarser leaf material hold its shape against the bombilla filter, preventing blockages. It also contributes the initial strong burst of flavour in the first infusion. If you are brewing in a French press or teapot, the polvo will settle at the bottom — pressing or straining removes it from the cup.
Traditional South American mate processing historically used wood fire or smoke for the initial drying step — a method that imparts a smoky, tobacco-like flavour and can introduce polycyclic aromatic hydrocarbons (PAHs), the same compounds produced by chargrilling meat. This product is processed using controlled air-drying methods without smoke, eliminating PAH contamination and producing a cleaner flavour profile that lets the natural character of the aged leaf come through without any smoky interference. Smoke-free processing is increasingly standard among premium organic producers.
Approximately 80mg of caffeine per cup, depending on brew strength, water temperature, and steep time — broadly comparable to a standard cup of coffee. Yerba mate also contains theobromine (found in cacao) and theophylline (found in black tea), two related xanthine alkaloids that are also naturally present. The ageing process does not significantly alter caffeine content. This is a high-caffeine product and is not suitable for those avoiding caffeine.
Traditional gourd: Fill three-quarters full, bank the leaves to one side, insert the bombilla into the clear space, prime with a small amount of cool water, then add water at 70–80°C. Sip and refill repeatedly. French press: Use 2 tablespoons per cup, pour 80°C water, steep 4–6 minutes, press and serve.
