About

Our Organic Aged Yerba Mate (*Ilex paraguariensis*) is a premium South American tea known for its unique ability to offer the "strength of coffee, the health benefits of tea, and the euphoria of chocolate." Unlike green, unaged varieties, our Yerba Mate is aged for 12 to 24 months. This seasoning process allows the leaves to develop a rich, tawny olive colour and a sophisticated flavour profile that is smoother, woodier, and significantly less bitter than fresh harvests. It contains a natural balance of caffeine, theobromine, and theophylline, providing a sustained energy boost without the crash.

Directions of Use

Yerba Mate is incredibly versatile. You can brew it traditionally or like a standard loose-leaf tea.

1. Traditional Gourd (The Ritual): Fill a gourd 3/4 full with herb. Shake to bank the leaves to one side. Insert the bombilla (filtered straw). Pour cool water into the gap to protect the nutrients, then top up with hot (not boiling) water (70-80°C). Sip and refill.

2. French Press: Use 2 tablespoons of herb per cup of water. Pour over hot water (80°C) and steep for 4-6 minutes. Press and serve.

3. Mate Cocido (Tea Pot): Brew in a teapot with a fine mesh infuser for a lighter, tea-like drink. Add lemon and honey to taste.

4. Iced Mate (Tereré): Brew strong, sweeten with agave or honey while hot, let cool, and serve over plenty of ice with fresh lime and mint.

Just like a fine wine or whiskey, Yerba Mate benefits from aging. Our leaves are seasoned for up to 24 months. This process reduces the high acidity and bitterness found in fresh green mate, resulting in a smoother, woodier, and more refined flavour.

Yerba Mate is high in caffeine, containing about 80mg per cup (similar to coffee). However, because it also contains Theobromine (found in chocolate) and Theophylline, users often report the energy buzz is 'cleaner' and jitter-free compared to coffee.

Absolutely. While the traditional gourd is ceremonial, a French Press is the most convenient modern way to brew it. Use hot water (not boiling) and steep for 5 minutes for a delicious brew known as 'Mate Cocido'.
