Vanilla pod grading reflects moisture content, length, plumpness, and surface appearance. A-grade (also called Grade A or Gourmet grade) pods are the highest classification — they are characterised by high moisture content (typically 25–35%), full plumpness, pliability (the pod bends without cracking), a rich oily sheen on the surface, and an intensely complex, deep vanilla fragrance that reflects full vanillin development through the curing process. Non-split means the pod casing is intact and has not opened along its length, which is the preferred presentation for retail and culinary use. Lower grade (Grade B) pods have lower moisture content and are less plump — they are still fragrant and perfectly suitable for vanilla extract and powder production, but lack the luxurious tactile quality of Grade A.
Yes — this is completely normal and is actually a sign of quality. The white crystalline coating is called givre (from the French for "frost") and consists of vanillin crystals that have migrated to the surface of the pod as the vanillin compound reaches concentration levels that cause it to crystallise out of the pod's interior. Givre is most commonly seen on the ends of the pods and on the outer surface. It is harmless, perfectly natural, and its presence is associated with a high vanillin content — which means more intense flavour. You can simply wipe it off if the appearance is unwanted, or leave it in place. Keeping the pods refrigerated reduces the likelihood of givre formation by slowing the crystallisation process.
Surface mould on vanilla pods is a well-understood phenomenon — it is fundamentally different from the hazardous mould that grows on bread, cheese, or other foods. The mould that occasionally forms on vanilla is harmless, is caused by the combination of high moisture content and exposure to air and warmth, and does not penetrate into the pod interior the way moulds do on softer foods. It can simply be wiped off the pod surface and the pod used normally. To prevent mould forming: store in an airtight container under refrigeration as directed. If mould does appear, wipe clean, ensure the container is properly sealed, and return to refrigeration.
Scraping the seeds: split the pod lengthways with a sharp knife and scrape out the tiny black seeds (vanilla caviar) with the back of the knife — these are added directly to custards, ice cream bases, panna cotta, cake batters, and cream. Infusing the pod: add the scraped pod (or an unsplit pod) to milk, cream, or sugar and heat gently — the pod releases its flavour compounds into the liquid. Remove before serving. Vanilla sugar: bury used or whole pods in a jar of caster sugar for 2–4 weeks — the sugar absorbs the vanilla fragrance and becomes vanilla-scented sugar for baking. Extract production: submerge split pods in a neutral spirit (vodka, bourbon) for 6–8 weeks for a home vanilla extract. The pods can also be dried and ground to produce vanilla powder.
Vanilla is the second most expensive spice in the world by weight, behind saffron. The cost reflects the extraordinary labour intensity of production — vanilla orchid flowers open for only one day and must be hand-pollinated individually in most growing regions outside of Mexico (where native pollinators exist). After harvest, the green pods undergo a months-long curing process (blanching in hot water, wrapping and sweating for weeks, then slow drying and conditioning) that can take 3–6 months before the pods are ready for market. A single kilogram of cured vanilla requires the pollination of hundreds of flowers and months of skilled labour. The non-refundable policy reflects the perishable, high-value, high-moisture nature of this product — because vanilla pods are a fresh, living product with specific storage requirements, returns cannot be accepted once the pods have left our facility.
