Directions of Use

1. Use 1-2 teaspoons of dried elderflowers per cup (250ml).

2. Pour over near-boiling water (around 90-95°C) to protect the delicate floral compounds.

3. Steep covered for 5-10 minutes. Covering the cup traps the volatile oils and aroma.

4. Strain and enjoy. Tastes delicious on its own, with a slice of lemon, or sweetened with honey.

5. Can also be used to infuse syrups, custards, or baked goods with a floral note.

Elderflower has one of the most distinctive and complex aromatic profiles of any botanical flower used in food and beverage. The aroma is sweet, intensely floral, and subtly fruity — with characteristic notes most commonly described as lychee, white grape, pear, and a fresh, slightly muscat-like quality that is immediately recognisable once experienced. There is also a very faint green, almost fresh-cut stem character underneath the sweetness that gives it depth and complexity. As a tea, the flavour is light, delicately sweet, and pleasantly floral — gentle and refined rather than intense or assertive. The aroma is significantly stronger and more impactful than the flavour, which is why elderflower performs particularly well in cordials and syrups where the aromatic compounds are extracted into the liquid.
Dried elderflowers work well for cordial, though fresh produce a slightly more vivid result — dried delivers a reliable, year-round alternative. Basic method: bring 500ml water and 500g sugar to a gentle simmer until sugar dissolves. Remove from heat. Add 30–40g dried elderflowers and the juice and zest of 2–3 lemons. Stir, cover, and steep for 12–24 hours. Strain through a fine cloth or muslin, pressing the flowers gently. Bottle the syrup and store refrigerated for up to 3–4 weeks. Use diluted approximately 1:10 with still or sparkling water, or use as a cocktail mixer. The addition of citric acid (1–2 teaspoons) helps preserve the cordial and brightens the flavour. This is also an excellent base for flavouring champagne, gin cocktails, panna cotta, and fruit salads.
Both come from the same plant — Sambucus nigra, the European Elder tree — but represent completely different parts and have very different flavour profiles and uses. Elderflower is the small, creamy-white blossom that appears on the tree in late spring to early summer. Elderberry is the small, dark purple-black fruit that forms later in the season, in late summer and early autumn, if the flowers are left on the tree. Note that raw elderberries contain compounds that can cause nausea and should not be consumed raw — they require cooking or processing before consumption.
