Directions of Use

1. Use 1-2 teaspoons of dried elderflowers per cup (250ml).

2. Pour over near-boiling water (around 90-95°C) to protect the delicate floral compounds.

3. Steep covered for 5-10 minutes. Covering the cup traps the volatile oils and aroma.

4. Strain and enjoy. Tastes delicious on its own, with a slice of lemon, or sweetened with honey.

5. Can also be used to infuse syrups, custards, or baked goods with a floral note.

Elderflower's defining character is its fragrance — an intensely sweet, floral-fruity volatile aroma produced by specific terpene and ester compounds in the flower. These volatile compounds are what make elderflower one of the most aromatic botanicals commercially available, but they are also highly sensitive to degradation once the flower is milled. When dried elderflower is ground to powder, the milling process dramatically increases the surface area — every particle is exposed to air, light, and heat — which accelerates the loss of these volatile aromatics. Pre-milled elderflower powder that has been stored for weeks or months will have noticeably diminished fragrance compared to freshly milled product. By milling to order, The Herbal Connection delivers powder at the point of maximum aromatic potency — meaning more fragrant product for baking, beverage, and confectionery applications. For a flavour-neutral ingredient, pre-milling is fine; for elderflower, where fragrance IS the value, freshly milled makes a real difference.
Baking: sift ½–1 teaspoon into cake batter, shortbread, scone mix, and Victoria sponge for a subtle, elegant floral note — elderflower pairs exceptionally with lemon, gooseberry, and vanilla. Add to icing and buttercream for a fragrant floral finish. Beverages: whisk into warm milk for an elderflower latte; blend into cold press juice concentrates, smoothies, and flavoured water; incorporate into drink powder blends as an aromatic flavouring. Confectionery: blend into white chocolate ganache, panna cotta, Turkish delight, and marshmallow. Cordial syrups: dissolve into a warm sugar syrup (the powder disperses into syrup better than into water alone) and strain if a clear result is desired. Distillery: add to the cold-infusion stage of gin production for a fine-particle botanical addition; also suitable for flavouring syrups and spirits at the blending stage. Dairy: stir into yoghurt, cream, and ice cream bases.
Not directly — elderflower powder dissolved in water or syrup will produce a cloudy, turbid liquid rather than the crystal-clear cordial made from infused whole flowers. The fine powder particles remain suspended and cannot be fully clarified by ordinary straining. For a clearer result, dissolve the powder in warm sugar syrup, allow to steep briefly, then strain through a very fine cloth or muslin — the syrup will be semi-clear with the elderflower flavour present, though not as brilliantly transparent as whole flower cordial. For applications where a clear cordial is the goal — classic elderflower cordial, clear drinks — the Elderflower whole dried flowers (conventional or organic) are the appropriate format, steeped and strained in the traditional way. The powder is best suited for creamy, opaque, or incorporated applications where clarity is not required.
Both come from the same plant — Sambucus nigra, the European Elder tree — but are harvested at completely different times and have very different properties. Elderflower is the delicate, creamy-white blossom that appears in late spring to early summer, with an intensely sweet, floral-fruity fragrance used in cordials, tea, baking, and gin. Elderberry is the small, deep purple-black fruit that forms later in the season (late summer to autumn) if the flowers are left on the tree. Elderberries are tart, dark, and richly fruity — used in jams, syrups, juices, and wines. Importantly, raw elderberries contain naturally occurring compounds that can cause nausea and should not be consumed raw — they require cooking or processing before use. Elderflowers do not have this issue and can be used fresh, dried, or as powder without the same precautions.
