Apple Diced High Moisture — Malus domestica, China

Apple Diced High Moisture (Malus domestica) — diced apple pieces processed to retain significantly more natural moisture than standard dried apple, producing a distinctly different product: soft, plump, and tender with a "soft-bite" texture that is closer to gently poached fresh apple than to the chewy, leathery character of conventional dried fruit. This high moisture format is specifically designed for baking, tea blending, and food manufacturing applications where a rehydrated texture is required but soaking or rehydrating the fruit first is impractical or undesirable.

High moisture apple pieces can be added directly to muffin batters, cake mixes, fruit breads, cookie dough, cereal blends, and granola formulations without pre-soaking — they will not draw moisture out of the batter the way standard dried fruit can. In tea blends, the higher moisture content means the pieces infuse quickly and contribute a clean, natural apple sweetness and flavour to the cup. Sweet, mild apple character with characteristic natural sweetness. No known allergens. Available in 250g, 500g, 1kg, and 5kg bulk.

Apple Diced High Moisture — FAQs

Everything you need to know before you order.

Standard dried apple is dehydrated to a very low moisture level — typically 3–5% moisture — producing the familiar chewy, leathery, shelf-stable dried fruit used in muesli and trail mix. High moisture dried apple is processed to retain significantly more of the fruit's natural water content — typically 20–30% moisture — producing a product that is noticeably softer, plumper, and more tender than standard dried apple, with a texture closer to a gently simmered or poached apple piece. The trade-off is that high moisture product requires more careful storage (sealed container, preferably refrigerated after opening) and has different performance characteristics in applications. For baking and food manufacturing applications where a soft fruit texture is required without rehydration, high moisture is the preferred format.
No — this is one of the primary advantages of the high moisture format. Standard low-moisture dried fruit often needs to be soaked before incorporation into cake batters and dough because the dehydrated fruit will otherwise draw moisture from the surrounding batter during baking, leaving the crumb dry and the fruit still leathery after cooking. High moisture apple pieces already contain sufficient natural moisture to bake without this problem — they can be added directly to muffin batter, fruit bread dough, cookie mixes, and cake batters and will emerge from the oven soft and plump. For tea blend applications, the higher moisture content also means the pieces infuse and release their apple flavour and sweetness more quickly and completely than low-moisture alternatives.
Baking: muffins, apple cakes, fruit loaves, scones, crumbles, and strudel — the soft-bite texture performs like freshly diced apple without the prep work or the moisture variation of fresh fruit. Tea blending: apple is one of the most popular and universally appealing inclusions in herbal and fruit tea blends — it pairs naturally with cinnamon, rosehip, hibiscus, ginger, and lemon in both hot and iced tea applications. The high moisture format releases flavour quickly and evenly. Granola and muesli: fold through finished granola for a softer fruit inclusion than standard dried apple. Fruit mixes and snack blends: pairs well with dried apricot, dates, raisins, and nuts. Cereal and porridge toppings: softer texture works better than standard dried apple in applications where a tough chew is undesirable. Food manufacturing: suitable for any application requiring a consistent, ready-to-use soft apple piece without rehydration.
High moisture dried fruit requires more careful storage than standard dried fruit due to its elevated moisture content. Before opening: store below 23°C in a cool, dark location — the sealed bag is sufficient protection in normal ambient conditions. After opening: transfer to a sealed airtight container and refrigerate — refrigeration is strongly recommended in the Australian climate where ambient temperatures and humidity can accelerate moisture-related degradation. Do not leave opened product at room temperature for extended periods. When stored correctly, shelf life is 2+ years. Signs of spoilage include visible mould (if exposed to moisture), off-odour, or significant texture change — discard if any of these occur.
