Diced Dates (Phoenix dactylifera) — whole dried dates conveniently diced into small, uniform pieces, sourced from the Middle East and North Africa. Phoenix dactylifera, the date palm, is one of the oldest cultivated fruit trees on earth — domesticated in the Arabian Peninsula and the Fertile Crescent for thousands of years, and today a major commercial crop across the Middle East, North Africa, and California. The fruit is among the most intensely sweet of all dried fruits, containing approximately 63–75% total sugars by dry weight, almost entirely as fructose and glucose, which gives it an extraordinarily concentrated, rich, caramel-honey sweetness with none of the tartness or acidity of most other dried fruits.

The diced format makes dates directly usable in food manufacturing and kitchen applications without the labour of manually pitting and chopping whole dates — a significant convenience advantage given how sticky and dense whole dates are. Diced dates are a foundational ingredient in energy ball and bliss ball production (where their natural stickiness acts as a binder), muesli and granola, baked goods (particularly Middle Eastern-inspired baking and raw-food applications), and as a natural sweetener substitute in food formulations. Whole dates require pitting and chopping before use in most applications — a time-consuming and sticky process at any scale. Diced dates are already pitted, chopped to a uniform small piece size, and ready to use directly from the pack. For food manufacturers producing energy balls, muesli, granola bars, and baked goods at volume, this represents a significant labour and time saving. The uniform piece size also distributes more evenly through batters and mixes than irregularly hand-chopped whole dates. The trade-off is that diced dates have more surface area exposed to air, which can cause them to dry out faster than whole dates if not stored in a sealed container — but under correct storage conditions the shelf life is the same.
Energy balls and bliss balls: the most popular application — dates are the primary binder and sweetener in no-bake energy balls; combine with oats, nuts, seeds, coconut, and cocoa powder and roll into balls. Their natural stickiness holds the mixture together without additional binders. Baking: fold into muffin, cake, and bread doughs; use in date-and-walnut loaves, sticky date puddings, and Middle Eastern date-filled pastries. Granola and muesli: scatter through muesli and granola formulations for pockets of intense natural sweetness. Natural sweetener substitute: blend with water to create date paste — a 1:1 substitute for refined sugar in many baking applications. Dates have an extraordinarily high natural sugar content — approximately 63–75% by dry weight — making them one of the most concentrated natural sweeteners available as a whole food. Date paste (made by blending dates with water) functions as a direct substitute for refined sugar in many baking applications. As a practical starting point: blend 1 cup of dates with ½ cup of water until smooth, then use 1:1 by volume in place of sugar in the recipe. The paste adds moisture as well as sweetness, so reducing other liquids in the recipe slightly may be necessary. Diced dates can also be folded directly into batters where they soften and dissolve partially during baking, providing pockets of sweetness without needing to be made into paste first.
For most applications, diced dates can be used straight from the pack without soaking. In energy ball formulations, the natural moisture and stickiness of the dates provides sufficient binding without rehydrating. In baked goods, the diced pieces soften during baking. When soaking is useful: if the dates have dried out and hardened during storage, soaking in warm water for 10–20 minutes will restore their soft, pliable texture — drain well before using. Soaking is also recommended before blending into date paste or smoothies, as it makes blending easier and produces a smoother result. The soaking liquid has a pleasant natural date sweetness and can be added to smoothies and beverages rather than discarded.
Store in a sealed, airtight container below 23°C in a cool, dark, dry location. Dates are naturally very high in sugar, which acts as a natural preservative — they have a shelf life of 2+ years under correct storage conditions without any artificial preservatives. In warm or humid climates, refrigeration is recommended to maintain soft texture and prevent the natural sugars from crystallising on the surface. Dates can also be frozen for very long-term storage; defrost in the sealed container at room temperature. If diced dates have clumped together in the bag, break apart gently — clumping is caused by the natural sugars and does not indicate spoilage. Off-odour or mould indicates actual spoilage.
