Directions of Use

1. Measure about 1 to 2 teaspoons of roasted yerba mate leaves per cup. Adjust the amount to your taste preferences.

2. Heat water to the recommended temperature of 65-70°C. Avoid using boiling water, as it can make the yerba mate bitter. Pour the hot water over the yerba mate leaves in your cup or teapot.

3. Allow the yerba mate leaves to steep in the hot water for about 3-5 minutes. The longer you steep it, the stronger the flavour will be.

4. If you're using a teapot, simply pour the infused yerba mate through a strainer into your cup. If you're using a cup, use a tea infuser or a fine-mesh strainer to strain out the leaves as you pour the liquid into another cup.

5. Enjoy! You can usually re-infuse the same yerba mate leaves at least once or twice, although each infusion may have a slightly different flavour profile.

 

Use a gourd and bombilla if you have access to them!

Green (unroasted) Yerba Mate is dried with hot air and retains its characteristic bold, grassy, vegetal bitterness. Roasted Yerba Mate — tostado — undergoes an additional roasting step after drying, applying dry heat to the leaves. This process caramelises natural sugars, reduces the bitter tannin extraction, and produces a deeply different flavour profile: warm, earthy, toasty, and notably smoother, with a character somewhat similar to hojicha — Japan's roasted green tea. Many people who find green mate too sharp or intense prefer the roasted version as their entry point into the category.
The roasting process does not significantly reduce the caffeine content of the leaves. Roasted Yerba Mate still contains naturally occurring caffeine, along with theobromine and theophylline. What changes is the flavour profile and the extraction profile — the roasted version is more forgiving with water temperature and tends to release its character more gently, which can make the caffeine experience feel smoother, but the underlying caffeine presence remains.
Use 1–2 teaspoons per cup. Water temperature: 65–75°C — the roasted variety is more forgiving than green mate and handles the higher end of this range well. Steep for 3–5 minutes and strain. The roasted leaves can typically be re-infused two to three times, with each subsequent infusion lighter and sweeter. Brewing methods: gourd and bombilla (traditional), French press, teapot with fine-mesh infuser, or a tea sock. Enjoy black or with a small amount of honey.
