Directions of Use

1. Measure about 1 to 2 teaspoons of roasted yerba mate leaves per cup. Adjust the amount to your taste preferences.

2. Heat water to the recommended temperature of 65-70°C. Avoid using boiling water, as it can make the yerba mate bitter. Pour the hot water over the yerba mate leaves in your cup or teapot.

3. Allow the yerba mate leaves to steep in the hot water for about 3-5 minutes. The longer you steep it, the stronger the flavour will be.

4. If you're using a teapot, simply pour the infused yerba mate through a strainer into your cup. If you're using a cup, use a tea infuser or a fine-mesh strainer to strain out the leaves as you pour the liquid into another cup.

5. Enjoy! You can usually re-infuse the same yerba mate leaves at least once or twice, although each infusion may have a slightly different flavour profile.

 

Use a gourd and bombilla if you have access to them!

The roasting caramelises the natural sugars, reduces bitterness and astringency, and produces a smoother, more mellow, toasty character — earthy and warm with less of the sharp, grassy punch of green mate.
