About

Our Organic Tasmanian Pepper Berry Leaf is a remarkable native Australian spice, wild-harvested from the cool temperate rainforests of Tasmania. The leaves offer a woody, herbaceous, and spicy flavour with a uniquely delayed, lingering heat that sets it apart from conventional peppers.

As always, it's advisable to consult with healthcare professionals for personalised guidance on health concerns.

Directions of Use

1. Use the whole dried leaves as you would a bay leaf, adding them to slow-cooked casseroles, curries, and sauces to infuse a complex, spicy flavour.

2. Crumble or grind the leaves to use in spice rubs and marinades for red meats, game, or poultry.

3. Be mindful of its potent, building heat. Start with a small amount, as the spiciness can intensify over time, especially with slow cooking.

4. Infuse the leaves in olive oil or vinegar for a week to create a unique, spicy dressing or finishing oil.

5. Store in a cool, dark, airtight container to protect its volatile oils and potent flavour.

Tasmanian Pepper Berry Leaf — Wild Harvested Tasmannia lanceolata

Tasmanian Pepper Berry Leaf (Tasmannia lanceolata) — wild-harvested from the cool temperate rainforests and subalpine woodlands of Tasmania, and the more aromatic, herb-forward expression of Australia's most celebrated native pepper plant. Where the whole berry delivers an intensely fruity-then-fiery experience, the leaf offers a more nuanced profile: woody, herbal, and aromatic with a warm, complex spiciness that builds gradually and lingers — closer in use to a bay leaf or rosemary in its application, but with a distinctly Australian peppery heat underneath. The leaf contains the same heat compound, polygodial, as the berry — but at lower concentration — making it better suited to applications where integrated aromatic warmth is preferred over intense frontal heat.

Wild harvested from Tasmanian wilderness — naturally grown without conventional farming inputs, but not certified organic. No known allergens. Freeze-treated. Available in 250g, 500g, 1kg, and 5kg bulk. A leaf powder version and whole berries are also available separately. This product is sold as a food only.

Tasmanian Pepper Berry Leaf — FAQs

Everything you need to know before you order.

The leaf has a more complex and layered character than the berry. The initial impression is herbal, woody, and aromatic — reminiscent of bay leaf or rosemary but with a distinctly Australian quality that is hard to place against any other herb. This gives way to a warm, sharp spiciness that builds gradually on the palate and lingers. The heat is produced by polygodial — the same compound found in the berry — but at a lower concentration, giving the leaf a more integrated, background warmth rather than the frontal heat intensity of the berry. The overall effect is of a complex aromatic herb that also seasons a dish — functioning simultaneously as a flavour herb and a heat spice.
Both come from Tasmannia lanceolata but serve different culinary roles. The berry is hotter, with a pronounced fruity, dark upfront character followed by intense building heat — it functions primarily as a direct heat and flavour spice used sparingly. The leaf is more aromatic and herbal, with a milder though still meaningful heat — it functions more like a culinary herb, suitable for infusing into dishes over longer cooking times. As a rough guide: use the berry where you want a fiery punch of native pepper; use the leaf where you want a subtle, integrated aromatic warmth throughout the dish. Both are significantly more heat-potent than black pepper and should be used sparingly until you are familiar with their intensity.
Whole leaves in slow cooking: use as you would a bay leaf — add 1–2 whole dried leaves to stews, casseroles, braises, soups, and slow-cooked sauces, and remove before serving. The leaf infuses a complex, spicy warmth throughout the dish during the cooking process. Crumbled or ground: crumble or grind the dried leaves for use in spice rubs, marinades, and seasoning blends for red meats, game meats (kangaroo, venison), and poultry. Infusion: steep in olive oil or quality vinegar for 1–2 weeks to create a distinctively flavoured finishing oil or dressing. Distillery: use in gin and spirits botanical infusions for a native aromatic herb note. Use sparingly — the heat builds during cooking, particularly in slow-cooked dishes, and can become more intense than anticipated if too many leaves are used.
The robust, complex character of pepper berry leaf stands up well to strong, rich flavours. Red meats: beef, lamb, and particularly game meats (kangaroo, wallaby, venison) — the leaf's native character is a natural match for Australian game. Slow-cooked dishes: beef stews, lamb braises, meat pies, and casseroles where long cooking allows the leaf to fully infuse. Rich sauces: red wine reductions, jus, and stock-based sauces for red meat. Roasted vegetables: particularly root vegetables and brassicas. Cheese: crumbled leaf works well paired with aged Australian cheddar and blue cheese. Less suitable for delicate proteins (white fish, eggs) where its assertive character can overpower.
No — Tasmanian Pepper (Tasmannia lanceolata) and black pepper (Piper nigrum) are from completely different plant families and are botanically unrelated. Black pepper is a tropical vine in the family Piperaceae, native to South Asia, whose heat comes from the compound piperine. Tasmanian pepper is a cool-temperate Australasian shrub in the family Winteraceae, native to Tasmania and south-eastern mainland Australia, whose heat comes from polygodial — a sesquiterpene dialdehyde with a structurally different mechanism that produces a sharper, more building, and more persistent heat sensation. The two are not interchangeable in cooking, though the leaf can function in similar culinary contexts to bay leaf or long pepper.
Tasmanian Pepper Berry Leaf is available in 250g, 500g, 1kg, and 5kg bulk packs. The 5kg is bulk packed, not individual units. The complementary range also includes Tasmanian Pepper Berries Whole and Tasmanian Pepper Berry Leaf Powder — available separately. We ship Australia-wide from our Gold Coast warehouse.
