Sunflower seeds are harvested from the flower head of the sunflower plant. While the seed itself is encased in a black and white striped shell, sunflower seeds are white and have a tender texture. These are kernels — fully shelled, ready to eat, with no hull to remove. The hull accounts for a significant portion of the whole seed's weight and has essentially no food value; the kernel is the edible, nutritious inner seed. Kernels are more convenient for food manufacturing, baking, and direct consumption, while in-shell seeds are more commonly used as a snack where the cracking-and-eating process is part of the experience.
Granola and muesli: sunflower kernels are a staple inclusion in granola and muesli formulations — they add a mild nutty background, pleasant texture, and distribute evenly through the mix. Baking: fold into bread doughs (sunflower seed bread is a classic), muffins, cookies, and energy bars; scatter over the top of loaves and rolls for visual appeal and crunch. Remove immediately to a cold surface — they continue cooking from residual heat. Oven method: spread in a single layer on a baking tray; roast at 160°C for 8–12 minutes, stirring once at the halfway point. Watch carefully from 8 minutes as kernels can burn quickly due to their natural oil content. Season with salt immediately after toasting if desired, while still warm. Allow to cool completely before storing. Toasted kernels are best used within a few days as the increased surface area accelerates oxidation.

Store in a sealed, airtight container below 23°C in a cool, dark, dry location. For extended shelf life beyond a few months, or in warm climates, refrigeration or freezing is strongly recommended — refrigerated kernels will stay fresh significantly longer, and frozen kernels can be kept for 12+ months without quality loss.
