Certified Organic Pu'erh Tea, AAAA Grade (Camellia sinensis) — also known as Pu-erh, Puerh, or Pu'er Tea — sourced from Yunnan, the historic heartland of pu'erh production in southwestern China, and harvested from tea trees approximately 60 years old. Older tea trees are widely regarded in pu'erh production as producing leaves with greater depth and complexity than younger, more intensively farmed bushes — the tree age is a genuine quality marker in this category and a key reason for the AAAA grading on this product.

Pu'erh is made from the same plant as green, oolong, white, and black tea — Camellia sinensis — but is processed differently. Where green tea is unfermented and black tea is fully (oxidatively) fermented, pu'erh undergoes a distinct post-fermentation process: after initial processing, the tea is aged under controlled humidity, during which beneficial microbial activity transforms the leaf over months or years. This is fundamentally different from the oxidation that defines black tea — pu'erh's fermentation is a genuine microbial process, similar in principle (though not microorganism) to other fermented foods. Well-aged pu'erh develops a characteristic deep, earthy, smooth, and complex flavour that is prized by tea connoisseurs and generally considered to improve with age, up to a point — like other fermented products, quality control during aging matters, and poorly stored or over-aged pu'erh can develop musty or stale off-notes. All true teas — green, white, oolong, black, and pu'erh — come from the same plant, Camellia sinensis. The difference between them is entirely in processing. Green tea is unfermented (oxidation is halted quickly after picking). Oolong is partially oxidised. Black tea is fully oxidised. Pu'erh is different again — it undergoes post-fermentation, a genuine microbial fermentation process that occurs after initial processing, during a controlled aging period (sometimes years) under specific humidity conditions. This microbial fermentation is what gives pu'erh its distinctive deep, earthy character and is fundamentally different from the simple oxidation that defines black tea. Pu'erh is traditionally compressed into cakes, bricks, or other shapes for aging, though loose leaf formats (such as this product) are also widely available.
Older tea trees, particularly those grown without intensive modern cultivation methods, are widely regarded within the pu'erh tea trade as producing leaves with deeper root systems and more complex chemical composition than younger, intensively farmed bushes — this is reflected in the flavour depth and complexity of the finished tea. This product is sourced from trees approximately 60 years old, which contributes to its AAAA grading. Pu'erh tea grading (commonly using a star or letter-grade system depending on the supplier) reflects a combination of leaf quality, tree age, harvest timing, and processing skill — AAAA represents a premium tier within this product's grading framework.
Rinse first: pu'erh benefits from a quick rinse before the main infusion — pour hot water (95–100°C) over the leaves, let sit for 5–10 seconds, then discard this first liquid. This step "awakens" the compressed or aged leaf and removes any surface dust accumulated during storage and aging. Main infusion: use approximately 1 teaspoon per 250ml of water at 95–100°C. Steep for 3–5 minutes for the first infusion. Multiple infusions: pu'erh is well known for yielding multiple good infusions from the same leaves — re-steep the same leaves 2–4 more times, extending the steeping time slightly with each subsequent infusion, as the leaves release their flavour gradually across infusions. This makes pu'erh excellent value per gram of leaf and is part of the traditional way of enjoying the tea.
Pu'erh's post-fermentation process involves controlled aging under humidity, and a mild, characteristic earthy or "aged" aroma is a normal and expected part of well-made pu'erh — this is different from spoilage. However, because the fermentation and aging process does involve a degree of microbial activity, quality control matters: poorly stored or improperly processed pu'erh can develop genuinely musty, mouldy, or stale off-notes that are not desirable and indicate quality issues rather than authentic pu'erh character. Properly produced and stored AAAA grade pu'erh — such as this product — should have a pleasant, deep, earthy aroma without a sharp mustiness or any sourness.
