Directions of Use

1. Use as a dry rub for meats. Pat your choice of meat dry and liberally coat all surfaces with the rub, pressing it in gently.

2. For best results, allow the rub to sit on the meat for at least 30 minutes (or up to a few hours refrigerated) before grilling, roasting, or pan-searing.

3. Mix with olive oil to create a flavourful paste or marinade for red meats, poultry, or game.

4. Sprinkle over roasted root vegetables like potatoes and pumpkin, or add to savoury damper recipes for an authentic bushfood twist.

The flavour builds in layers. The base is deep, savoury, and earthy — Wattleseed's nutty, coffee-like character combined with the mineral saltiness of Saltbush and the warmth of organic cinnamon creates a rich, dark foundation. On top of this sits a bright citrus lift from Organic Lemon Myrtle — clean, sharp, and immediately aromatic. The heat comes from two sources: the familiar pungency of cracked black peppercorns and the slower, building, lingering warmth of Tasmanian Pepperleaf — a combination that provides both immediate heat and a lasting finish. Parsley adds a clean, herbal freshness. The overall effect is complex and distinctly Australian — savoury, spicy, citrusy, and earthy all at once.
The robust, layered character of the blend stands up best to strong, rich-flavoured proteins. Red meats: beef steak, lamb rack, lamb shoulder — the Wattleseed and Saltbush combination is a natural with Australian lamb. Game meats: kangaroo, venison, and emu — the native spices are a particularly apt match for Australian game. Poultry: chicken thighs and drumsticks, duck breast. BBQ and grilling: works exceptionally well as a dry rub on the grill or smoker where the heat caramelises the Wattleseed sugars and creates a dark, flavourful crust. Vegetables: roasted root vegetables (pumpkin, sweet potato, beetroot) and whole cauliflower. Damper and savoury baking: fold into damper or flatbread dough for a distinctly Australian bushfood loaf.
As a dry rub: pat the protein dry with paper towel, then liberally coat all surfaces with the rub, pressing it in gently so it adheres. For best results, allow it to rest on the meat for at least 30 minutes — or up to several hours refrigerated — before cooking. The resting time allows the salt to draw moisture to the surface and then reabsorb it with the spice flavours, penetrating deeper into the meat. As a wet paste: mix 2–3 tablespoons of the rub with enough olive oil to form a thick paste, then coat the protein and massage in. This is particularly effective for oven roasting and slow cooking. As a finishing sprinkle: use sparingly over plated dishes, salads, and roasted vegetables at the table.
