Maitake (Grifola frondosa) is a large, multi-lobed polypore mushroom that grows at the base of oak, elm, chestnut, and beech trees across temperate East Asia, North America, and Europe. In Japan, where it is most celebrated, it is known as Maitake — "dancing mushroom" — reportedly because people who found it in the wild would dance with joy at its discovery, as it was both rare and prized. In English it is called "Hen of the Woods" for its overlapping fronds resembling a hen's ruffled feathers. A single specimen can reach extraordinary size — up to 50kg in wild form — making it one of the most impressive fungi in the forest ecosystem. It grows naturally in autumn and has been foraged and cultivated in Japan for centuries, featuring prominently in Japanese culinary tradition.
Maitake is particularly rich in a class of beta-glucan polysaccharides that are the focus of most of its modern research. A specific beta-glucan fraction from maitake — known as D-fraction or SX-fraction — has been the subject of extensive scientific study since the 1980s, primarily in Japan, for its effects on immune modulation. Maitake also contains ergosterol (a Vitamin D precursor), a range of B vitamins, potassium, and other minerals. Its high protein content (19.8g per 100g) is notable and reflects its status as a nutritionally dense culinary ingredient as well as a functional one.
Maitake occupies a middle position between the strongly culinary mushrooms (like Shiitake) and the primarily functional, non-culinary mushrooms (like Reishi). It has a genuinely pleasant, mild earthy flavour that works well in food applications — much more so than Reishi, which is extremely bitter. At the same time, it has a well-developed functional research profile centred on its distinctive beta-glucan content. The D-fraction beta-glucan is particularly well-studied and is the subject of more published research than most other functional mushroom compounds.
