Recipe: Lemon Myrtle Shortbread

Lemon Myrtle is a tall rainforest tree native to the subtropical rainforests of south-east Queensland, and its leaves contain one of the highest recorded concentrations of citral — the essential oil compound responsible for the archetypal lemon aroma — of any plant on earth. Citral is the same compound that gives lemon essential oil its character, but in Lemon Myrtle it is present at concentrations of 90–98% of the essential oil content — far higher than in any actual lemon or citrus fruit. The result is a lemon character so pure, clean, and intense that it surpasses lemon itself in both aromatic impact and flavour fidelity.

The lemon flavour and aroma we perceive in citrus fruit comes primarily from a compound called citral — a naturally occurring aldehyde that is the dominant aromatic compound in lemon essential oil. In lemon fruit, citral comprises roughly 60–80% of the essential oil. In Lemon Myrtle (Backhousia citriodora), citral typically comprises 90–98% of the essential oil content — a significantly higher concentration than any citrus fruit. The result is a lemon character that is purer, more intense, and less diluted by other aromatic compounds than the lemon fruit itself. This is why Lemon Myrtle is described as "more lemon than lemon" and why it is used as a superior lemon flavouring agent in food and personal care product applications globally.
As a tea: add 1–2 teaspoons of dried leaf to a cup of freshly boiled water and steep covered for 5–7 minutes — covering the cup retains the volatile citral oils that otherwise escape as steam. The resulting infusion is bright, clean, and intensely lemony. Baking: sprinkle ground or crumbled leaf into shortbread, cakes, biscuits, and slices where lemon flavour is desired — use approximately half the quantity you would of lemon zest and adjust upward. Savoury cooking: excellent with fish, chicken, and seafood — scatter over before and after cooking, use in marinades, or infuse into butter and oil. Syrups and beverages: steep in simple syrup for cocktails, cordials, and lemonade. Confectionery: fold into panna cotta, custard, and ice cream bases. Use sparingly — the flavour is highly concentrated.

The whole leaf is the preferred format for tea infusions and applications where the leaf structure provides a strainable, visible herb. The ground powder is more convenient for baking, spice blending, coating applications, and manufacturing where a fine, evenly dispersible powder is required. Both formats are certified organic Australian-grown and sourced from the same species — the choice comes down to the intended application.
All four are lemon-flavoured herbs but with meaningfully different characters. Lemon Myrtle (Backhousia citriodora) is the most intensely and purely lemony — dominated by citral at extraordinary concentration, clean, bright, and without bitterness; Australian native. Lemon Grass (Cymbopogon citratus) also contains citral as its primary compound but at lower concentration, with a slightly more grassy, complex character — most associated with South-East Asian cooking. Lemon Verbena (Aloysia citriodora) has a fine, slightly floral lemon character — softer than Lemon Myrtle and more commonly used in European herbal tea traditions. Lemon Balm (Melissa officinalis) is the mildest of the four — gentle, slightly minty lemon with a calming traditional profile. For the strongest, purest lemon impact in food and beverage applications, Lemon Myrtle is the clear choice.
