The flavour is genuinely lemon-forward but distinctly herbal — brighter and fresher than lemon verbena, softer and less floral than lemon myrtle, and with a mild herbal depth from the volatile oils in the leaf. Lemon balm has a fresh, clean, citrus-lemon aroma and a mild, gently herbal flavour — brighter and lighter than most other lemon-scented herbs. The lemon character comes from volatile oils in the leaf (primarily citral and citronellal) rather than any actual citrus fruit content. Brewed as a tea, it produces a pale golden to very light green liquor with a clean citrus-herbal character. The flavour is mild enough to work as a primary ingredient in a simple lemon herb tea, and versatile enough to support more complex blends. A longer steep deepens the herbal character; a shorter steep keeps it bright and clean.
Lemon balm is one of the most versatile tea blending ingredients available — its mild, clean lemon character integrates well with a very wide range of other botanicals. As a primary ingredient: use at 40–70% of blend weight for a simple, lemon-forward herbal tea; pair with spearmint for a fresh lemon-mint blend, or with chamomile for a lemon-floral blend. As a supporting ingredient: use at 10–30% to add citrus brightness to blends where the primary flavour is carried by a stronger herb — it lifts valerian, passionflower, and chamomile blends particularly well. Blending compatibilities: chamomile, spearmint, peppermint, lavender, rose petals, hibiscus, passionflower, elderflower, valerian, and lemon verbena all work well. The cut and sieved 3–8mm format is suitable for both loose leaf tea and pyramid tea bag applications.
All three are lemon-scented herbs but they have meaningfully different flavour profiles and behave differently in blends. Lemon Balm — mildest of the three; gentle citrus-lemon with a soft herbal character; most versatile in blends due to its non-assertive flavour; suitable for delicate formulations. Lemon Verbena — stronger, more intensely lemony with a slightly fruity and floral note; more assertive than lemon balm; can dominate lighter blends. Lemon Myrtle — the most intense of the three; very high citral content produces a powerful, sharp lemon character; used at lower inclusion rates than the others. Organic lemon balm (this product, HTO.LBK1) is grown without synthetic pesticides, herbicides, or chemical fertilisers and is certified under our SCX Organic Certification No. 24041 — suitable for use in certified organic finished products. Conventional lemon balm (HT.LBK1) is grown using standard agricultural practices and is available at a lower price point.
