Directions of Use

Homemade Gin Recipe (without a still)

1. Rinse a handful of juniper berries under cold water to clean them.

2. Place the juniper berries in a glass jar or bottle. Add other botanicals for more flavours, such as Lemon Peel for a citrus tone.

3. Pour your preferred alcohol base (such as a flavourless vodka) over the juniper berries, ensuring they are fully submerged.

4. Seal the jar or bottle tightly and store it in a cool, dark place for at least one week to allow the flavors to infuse.

5. After the desired infusion period, strain the liquid to remove the juniper berries and enjoy your homemade flavored spirit!

Other Uses

1. Crush juniper berries and steep in hot water to make a fragrant herbal tea.

2. Add whole juniper berries to culinary dishes like stews and marinades for a distinctive flavor.

3. Use powdered juniper berries as a seasoning for meats or vegetables.

Flavour profile icon

What do juniper berries taste like?

Juniper berries have a complex flavour that is sharp, resinous, and pine-like, with notes of citrus and pepper. They are the signature botanical that gives gin its characteristic taste.

Preparation icon

Do I need to crush juniper berries before using them?

Yes, it is highly recommended. Lightly crushing the berries with the flat side of a knife or in a mortar and pestle just before use breaks the outer skin and releases their aromatic essential oils, resulting in a much more flavourful dish or infusion.

Berry definition icon

Are juniper berries actual berries?

Botanically, no. They are not true berries. They are actually the seed cones of the juniper plant, which have unusually fleshy and merged scales that give them a berry-like appearance.

Cooking uses icon

What are juniper berries used for besides gin?

They are a versatile culinary spice. In European cuisine, they are famously used to flavour rich, gamey meats like venison, duck, and boar. They are also excellent in stews, marinades, brines, and for flavouring sauerkraut.

Dosage icon

How many juniper berries should I use in a dish?

Juniper has a potent flavour, so a little goes a long way. For a slow-cooked dish like a stew that serves 4-6 people, typically 4 to 8 crushed berries are sufficient to impart a noticeable flavour without being overpowering.

Raw berries icon

Can you eat juniper berries raw?

While they are safe to eat, raw juniper berries have a very strong, bitter, and resinous flavour that most people find unpleasant. Their flavour mellows and becomes more complex and enjoyable when they are cooked or infused.
