Our Sloe Berries, also known as Blackthorn (Prunus spinosa), are the dark purple fruit of the thorny hedgerow. They are a countryside classic, sought after in autumn to make warming sloe gin, wine, or jam. The berries have a very tart, astringent taste when raw and are intended for infusions.

Directions of Use
The most popular use for sloe berries is making Sloe Gin.
1. Rinse the dried sloe berries. You do not need to prick them as the drying process has already split the skins.
2. Fill a clean, airtight glass jar about halfway with the sloe berries.
3. Add sugar (a good starting point is 100-150g sugar per 500g of berries) and fill the jar with a good quality gin.
4. Seal and store in a cool, dark place for 2-3 months, shaking the jar every few days for the first two weeks.
5. Strain the deep red gin through a muslin cloth into a clean bottle. The berries can also be used for jams.
