Green banana powder is made from bananas harvested before full ripening — at the unripe stage, the banana's carbohydrate composition is fundamentally different from a ripe banana. Whereas a ripe banana is predominantly composed of free sugars (glucose, fructose, sucrose), an unripe green banana contains the bulk of its carbohydrate as resistant starch — a type of starch that resists enzymatic digestion in the small intestine and passes largely intact to the large intestine. This composition is reflected in the NIP: just 1.7g sugars per 100g, compared to approximately 17g in ripe banana, alongside 12g dietary fibre and 80g total carbohydrates.

The flavour is mild and subtly vegetal — noticeably different from ripe banana flavour, and much more neutral, which makes green banana powder a flexible ingredient in both sweet and savoury food manufacturing applications where a strong banana flavour would be unwanted. As a partial replacement, a starting ratio of 20–30% of the total flour volume works well for most applications — this adds the starch and fibre contribution without dramatically altering the texture of the finished bake. Higher replacement ratios (up to 50–60%) are possible in denser products like banana bread, energy bars, and dense muffins where structural collapse is less of a concern, but full flour replacement is generally not recommended without reformulation of other binding agents (eggs, flaxseed, xanthan gum).
