Chaga (Inonotus obliquus) is a parasitic fungus that grows primarily on the bark of mature birch trees (Betula spp.) across the boreal forests of Russia, Siberia, northern Europe, Canada, and northern China. Unlike most mushrooms, Chaga is not harvested from a fruiting body — it is a sclerotia: a dense, hardened mass of mycelium that erupts from wounds in the birch bark, growing over many years (typically 5–20) into the dramatically irregular, black-charred exterior structure by which it is identified. The interior is a warm, golden-orange colour. The host tree is generally killed in the process. The fungus has been a documented part of folk medicine in Russia, Poland, China, and the Baltic states for many centuries and was described in Chinese herbalist Shen Nong's texts as early as the 1st century BCE.
Chaga is notable for several distinctive compound classes. Melanin — the same pigment responsible for its black exterior — is present in unusually high concentrations and is associated with antioxidant activity. Superoxide Dismutase (SOD) is an enzyme with antioxidant properties found in significant quantities. Beta-glucans — polysaccharide compounds common to medicinal mushrooms — are present, though at lower concentrations than in fruiting body mushrooms like Reishi or Shiitake due to Chaga's sclerotia structure. Betulinic acid and inotodiol are triterpenes derived from the birch host tree and accumulated in the Chaga mass. The combination gives Chaga one of the highest ORAC (Oxygen Radical Absorbance Capacity) scores recorded in a natural food.
Chaga has a mild, earthy, slightly vanilla-like and very faintly bitter flavour — notably more pleasant and approachable than Reishi. It brews to a dark amber-brown colour and makes an excellent caffeine-free alternative to coffee, particularly when combined with a dash of honey, oat milk, or cinnamon. Add ½ to 1 teaspoon to hot water, stir well, and steep for 5–10 minutes. It also blends well into smoothies, lattes, broths, soups, and baked goods. The hot-water extraction method (simmering in liquid) is the most effective way to access the water-soluble beta-glucans and other compounds.
