Chaga (Inonotus obliquus) is a parasitic fungus that grows on mature birch trees across the boreal forests of Russia, Siberia, northern Europe, Canada, and northern China. Unlike conventional mushrooms, it is not a fruiting body but a sclerotia — a dense, hardened mass of mycelium that emerges from wounds in the birch bark over years of slow growth, forming the distinctive charcoal-black exterior structure by which it is recognised. Its use is documented in the folk medicine of Russia, Poland, China, and the Baltic states for many centuries, and Chinese herbalist Shen Nong referenced it as early as the 1st century BCE. It has been a staple wellness ingredient in Russian traditional medicine for at least 500 years.
Chaga is notable for several distinctive compound classes. Melanin — the pigment responsible for its black exterior — is present in unusually high concentrations and is associated with antioxidant activity. Superoxide Dismutase (SOD) is an antioxidant enzyme found in significant amounts. Beta-glucans are polysaccharide compounds associated with immune modulation in the broader medicinal mushroom literature. Betulinic acid and inotodiol are triterpenes absorbed from the birch host tree and accumulated in the Chaga mass — unique compounds not found in other fungi. Together these give Chaga one of the highest recorded ORAC (Oxygen Radical Absorbance Capacity) scores of any natural food.
Add ½ to 1 teaspoon to hot water, stir well, and steep for 5–10 minutes for a warming Chaga tea. The hot-water preparation method is the most effective way to access the water-soluble polysaccharides. Chaga has a mild, earthy, slightly vanilla-adjacent flavour that blends well into coffee, oat milk lattes, cacao, and broths. It can also be added to smoothies, soups, sauces, and slow-cooked recipes. Start with a smaller amount and adjust to taste.
