About

Our Conventional Butterfly Pea Flowers (*Clitoria ternatea*) are the secret behind the world's most vibrant natural blue foods and drinks. Native to Southeast Asia, these dried flowers yield an intense, deep sapphire-blue extraction when steeped in water. But the real magic happens with chemistry: add a squeeze of lemon or lime, and the liquid instantly transforms into a brilliant violet-purple. While they look exotic, they have a very mild, earthy taste similar to unsweetened green tea or spinach, making them the perfect natural food dye for cocktails, lattes, rice, and baking without altering the flavour profile of your dish.

As always, it's advisable to consult with healthcare professionals for personalised guidance on health concerns.

Directions of Use

The flowers are heat-stable and release their colour quickly in hot water.

1. Magic Tea: Steep 5-10 dried flowers in a cup of hot water for 3-5 minutes. Watch the water turn blue. Add honey to sweeten, then squeeze in a wedge of lemon to watch it turn purple before your eyes.

2. Natural Food Dye: Brew a concentrated "ink" by simmering 1/2 cup of flowers in 1 cup of water. Use this liquid to colour rice (Nasi Kerabu), icing, custards, or cocktails.

3. Blue Latte: Steep strong blue tea, strain, and whisk in steamed almond or coconut milk and a dash of vanilla for a calming, caffeine-free "Blue Moon Milk."

4. Cocktails/Mocktails: Infuse the flowers directly into gin or vodka for a spirit that changes colour when tonic (acidic) is added.

Magic chemistry icon

Why does it change colour?

It's natural chemistry! The blue pigment (anthocyanin) acts as a pH indicator. In neutral water, it is blue. When you add acid (like lemon juice), the pH drops and it turns purple/pink. If you add alkaline ingredients (like baking soda), it turns green.

Taste icon

What does it taste like?

Despite its wild colour, the flavour is very mild and subtle. It is described as earthy, woody, and slightly vegetal—similar to a very weak green tea or unseasoned spinach. This makes it perfect for dyeing food without changing the taste.

Caffeine free icon

Is it caffeine-free?

Yes, Butterfly Pea Flower tea is 100% naturally caffeine-free, making it a fun and safe drink for children or for relaxing in the evening.

Natural dye icon

Can I use it as a natural food dye?

Absolutely. It is one of the only heat-stable natural blue food dyes in the world. You can boil it to make a concentrated 'blue ink' to colour rice (like Nasi Kerabu), icing, custards, and even sourdough bread.

Health benefits icon

Are there health benefits?

Yes. The flowers are rich in antioxidants, specifically anthocyanins (the same compound found in blueberries). In Ayurveda, it is traditionally used to support cognitive function, eye health, and hair growth.

Pregnancy safety icon

Is it safe during pregnancy?

Generally, it is considered safe as a food dye. However, in medicinal amounts, traditional medicine suggests it may stimulate uterine contractions. We always recommend consulting your doctor before consuming herbal teas during pregnancy.
