Green yerba mate has a bold, earthy, grassy character — often compared in profile to a robust green tea, but more vegetal and with a distinct herbal bitterness. It has a fresh, slightly smoky aroma and a full-bodied, tannic structure. The flavour is assertive and characteristic — quite different from floral or fruity teas.
