Aged Yerba Mate — sometimes called estacionado — undergoes a controlled ageing process after drying, typically resting in cedar or similar wood for a period of months to years. The ageing mellows the characteristic grassy bitterness of green mate, producing a smoother, deeper, more complex flavour with earthy, woody, and slightly nutty characteristics. It is considered the most refined form of traditional yerba mate — prized in South America for its smoothness — sitting between the brightness of green mate and the warmth of roasted (tostado) mate.
Ginkgo (Ginkgo biloba) is one of the oldest living tree species on Earth — a "living fossil" with fossils dating back 270 million years. Native to China, it has been used in Traditional Chinese Medicine for over 5,000 years. The fan-shaped leaves are the part used in herbal practice and have been consumed in China for centuries as a tonic botanical associated with cognitive vitality and circulation. Ginkgo is now one of the most widely sold and researched botanical ingredients in the world, particularly in Germany where standardised ginkgo extracts are a mainstream medicinal product.
Bacopa monnieri — known as Brahmi in Ayurvedic tradition — is a creeping herb native to the wetlands of India, Nepal, Sri Lanka, and parts of East Asia. It has been used in Ayurvedic medicine for over 3,000 years and is one of the most highly regarded medhya rasayana herbs — a category of Ayurvedic botanicals specifically associated with the mind and nervous system. In Ayurveda, Brahmi is described as a tonic for intellect, alertness, and memory. It has a mild, slightly bitter, slightly sweet flavour and is used across South and Southeast Asia as both a food herb and medicinal botanical.
Lemon Myrtle (Backhousia citriodora) is a flowering tree endemic to subtropical Queensland, Australia — one of the country's most prized native botanicals. It has the highest natural citral content of any known plant, giving it an intensely pure, bright lemon fragrance and flavour. In this blend, the lemon myrtle serves a dual role: it provides a clean, uplifting aromatic brightness that cuts through the earthier notes of the aged mate, ginkgo, and bacopa; and it brings an authentic Australian botanical dimension to a blend rooted primarily in South American and Indian herbal traditions.
Yes — Yerba Mate naturally contains caffeine, along with theobromine and theophylline. Ginkgo, Bacopa, and Lemon Myrtle are all caffeine-free. The overall caffeine content of this blend will be lower than pure yerba mate due to the blending with three non-caffeinated botanicals, but it remains a caffeinated product.
Place one pyramid bag (2g) in your cup. Use water at 70–80°C — aged mate is somewhat more forgiving than green mate and can handle slightly higher temperatures without excessive bitterness. Steep for 4–6 minutes to allow the ginkgo and bacopa to infuse alongside the mate. Each bag can typically be re-infused once with a lighter, more citrus-forward second cup. Enjoy black or with a small amount of honey.
