Never store your dehydrated products in only zip-top bags. While helpful for short-term food storage, plastic storage bags for food are not air-tight. Air can permeate the plastic over time, allowing your produce to being to reabsorb moisture and for oxygen to break down your produce.

You can store smaller portions in zip-top bags and then store all of those in a larger airtight container. It's how we store much of our long-term storage powders because we don't want to take the chance of dropping a jar and losing the whole batch. Having them in smaller bags helps keep them safe, and adds an extra layer of protection.

Airtight containers could be one of the following:

  • Glass jars with tight-fitting lids - these can be canning jars, commercial food jars you recycle, etc.
  • Kilner jars - glass jars with clamping lids and rubber seals
  • Mylar bags
  • Vacuum seal bags
  • Plastic containers  that do not allow air to move in or out of the seal (one good test is to use both hands to squeeze the container. If you can hear or feel air movement in the lid or closure, it is not airtight.

Blueberry juice powder is made from extracted blueberry juice that has been concentrated and spray-dried — only the liquid component of the fruit is used, excluding the skin, seeds, and flesh fibre. The result is a highly water-soluble powder that disperses quickly and cleanly in liquid applications with no gritty texture. Whole blueberry powder is made from the entire fruit (dried and milled), retaining the fibre, skin, and flesh — it has a more complex flavour, higher fibre content, and a coarser texture that may not dissolve as smoothly. Juice powder is better suited to clear or smooth beverage applications where clean dispersibility and concentrated colour are priorities; whole fruit powder is better where full-fruit nutritional profile and fibre content are desired. Both deliver the characteristic blue-purple anthocyanin colour.
Smoothies and smoothie bowls: blend into smoothie bases for deep blue-purple colour and concentrated blueberry flavour — a small quantity goes a long way. Functional beverages: incorporate into sports drinks, wellness shots, and RTD beverage formulations where blueberry flavour and colour are desired in a water-soluble powder format. Natural food colouring: use as a natural blue-purple colourant in yoghurt, icings, frosting, panna cotta, and confectionery — note that like all anthocyanin-based colours, the hue is pH-sensitive (more blue-purple in neutral/alkaline; shifts toward pink-red in acidic conditions). Baking: fold into muffin and cake batters, pancakes, and smoothie bowls for colour and flavour — note colour may shift slightly with heat and pH changes from baking soda/powder. Powdered drink mixes: blend into instant drink mixes, latte powders, and functional powder sachets. Yoghurt and dairy: stir into yoghurt, cream cheese, and ice cream bases.
Spray-dried juice powders commonly use a carrier agent such as maltodextrin (a carbohydrate derived from corn, tapioca, or wheat starch) or acacia gum to facilitate the spray-drying process and improve powder flowability and shelf stability. The carrier is present as a processing aid. Whether this product contains maltodextrin or is pure spray-dried juice depends on the specific batch and supplier. We recommend contacting us for the current batch Certificate of Analysis (CoA) before formulating finished products, particularly if: you are producing products with "no added maltodextrin" claims; your target market requires clean-label ingredient declarations; or you are producing gluten-sensitive products where wheat-derived maltodextrin would be relevant. Blueberry's blue-purple colour comes from anthocyanin pigments — the same family of pigments responsible for the colours of red cabbage, black goji berries, and other deeply pigmented plants. These pigments are pH-sensitive: in neutral or alkaline conditions (pH 7+), they appear blue-purple; as pH decreases toward acidic conditions (pH below ~6), they shift toward pink and red. In baking, baking soda (alkaline) can cause the powder to turn more intensely blue; acidic ingredients like lemon juice or buttermilk shift the colour toward pink-red. In dairy applications, the pH of the base affects the final colour. For consistent blue-purple colour in finished products, keep the formulation pH neutral to slightly alkaline. This behaviour is a natural property of anthocyanin pigments, not a quality defect.
Blueberry juice powder is highly hygroscopic — it absorbs moisture from the air readily, causing clumping and caking. Store in a sealed, airtight container below 23°C in a cool, dark, dry location. Suitable containers include glass jars with tight-fitting lids, Kilner jars, Mylar bags, vacuum-seal bags, or food-grade plastic containers with a confirmed airtight seal. Simple zip-top bags are not airtight long-term and are not suitable for storage beyond a few days — air permeates the plastic over time, leading to moisture absorption. For large bulk quantities, storing in multiple smaller airtight portions rather than one large container reduces exposure each time you access the product. Protect from direct light as UV exposure degrades anthocyanin pigments and can cause colour fading. Well-stored powder has a shelf life of 12–24 months.
