About

Sage Cut is the dried, coarse-cut leaf of Salvia officinalis, the common garden sage long regarded as one of the essential kitchen herbs alongside parsley, rosemary and thyme. It has an earthy, gently peppery flavour with notes of pine and citrus, making it a versatile choice for cooking, loose-leaf herbal tea and custom herb blends. Sage has a long history in European and Mediterranean herbal traditions, where it was traditionally enjoyed as a tea and gargle and served alongside rich, hearty meals. Our sage is sourced from Egypt and Turkey across multiple batches, then freeze-treated and packed in Australia at our HACCP-certified facility.

As always, it's advisable to consult with healthcare professionals for personalised guidance on health concerns.

Directions of Use

Sage Cut is a concentrated, aromatic dried leaf, so a little goes a long way.

1. Herbal Tea: Add 1 teaspoon of Sage Cut per cup (250ml) of freshly boiled water. Cover and steep for 5–8 minutes, then strain. Add honey or a squeeze of lemon if desired.

2. Cooking: Add early in cooking so the leaves soften and release their flavour. Ideal for roast meats, stuffing, sausages, soups, casseroles and sauces. Use roughly one-third of the amount you would use of fresh sage.

3. Sage Butter: Crumble into melted butter over gentle heat and toss through pasta, gnocchi or roasted pumpkin.

4. Blending: Combine with thyme, rosemary and marjoram for dry rubs and seasoning mixes, or with peppermint and lemon peel in loose-leaf tea blends.

Sage Cut — FAQs

Everything you need to know about brewing, cooking with and storing dried sage.

Sage cut is the dried leaf of common garden sage (Salvia officinalis), cut into coarse pieces. It is larger and more textured than rubbed sage, which is fluffy and finely crumbled, and sage powder, which is fully ground. The cut form holds its aroma well and suits tea, slow cooking and herb blends.
Add about 1 teaspoon of dried sage cut to a cup (250ml) of freshly boiled water. Cover and steep for 5–8 minutes, then strain. A longer steep gives a stronger, more astringent cup. Sage tea can be enjoyed hot or iced, and pairs well with honey, lemon or mint.
Sage has been valued for centuries in European and Mediterranean traditions. It was traditionally enjoyed as a tea, used as a gargle, and served with rich, fatty meals. Today it is best known as a culinary herb and an aromatic herbal tea. For guidance on any health concern, it's best to consult a healthcare professional.
As a general rule, 1 teaspoon of dried sage replaces about 1 tablespoon of fresh chopped sage. Dried sage is more concentrated, so start with less and adjust to taste. Crumble the cut leaves between your fingers before adding them to release more flavour.
Sage is a classic partner for pork, chicken, turkey and sausages, and it is essential in traditional stuffing. It also works beautifully in brown butter sauces for pasta and gnocchi, with pumpkin and sweet potato, in bean dishes and in slow-cooked soups and casseroles. It blends well with thyme, rosemary and marjoram.
Sage naturally contains a compound called thujone, so it is generally enjoyed in moderate culinary and tea amounts rather than in large quantities over long periods. Many people enjoy one to two cups a day. If you are pregnant, breastfeeding, taking medication or have a health condition, please consult a healthcare professional before drinking sage tea regularly.
No. White sage is a different plant (Salvia apiana). Our Sage Cut is common garden sage (Salvia officinalis), the variety used in cooking and herbal tea. It is supplied as a food product.
Our sage is sourced from Egypt and Turkey, with origin varying between batches. Every batch is freeze-treated and packed in Australia at our HACCP-certified facility on the Gold Coast, Queensland.
Keep dried sage in an airtight container in a cool, dry place away from direct sunlight and heat. Its aroma fades gradually over time, so buying in a size that suits how quickly you use it helps keep the flavour at its best.
