Prune Powder - Prunes may contain antioxidant properties. Prunes may increase feelings of fullness and thus reduce the intake of total calories. Consumption of prunes may prevent constipation. It has been suggested in a preclinical study that plum extracts may increase calcium retention in bones.

Prunes act as a natural fiber supplement and have been shown to support healthy cholesterol levels, boost bone density, and may contribute to weight loss when used in combination with exercise and a healthy diet.

Prune Powder — Prunus domestica, Dried Plum Ground

Prune Powder (Prunus domestica) — dried prunes (dried plums) ground to a fine powder. A prune is simply a dried plum: Prunus domestica, the European plum, is the species from which the commercial dried prune is produced — specific varieties with a high natural sugar content and a favourable skin-to-flesh ratio that dries and concentrates well. The drying process concentrates the plum's natural sugars and intensifies its characteristic deep, rich, sweet-tart flavour, producing the distinctively dark, complex flavour profile that distinguishes prunes from other dried fruits. Milling the dried prune to a powder delivers this concentrated flavour and natural sweetness in a dispersible, ready-to-use format.

Prune powder has a deep, rich, sweet-tart flavour with characteristic jammy plum notes and a dark, earthy undertone — a complex flavour profile that works particularly well in baking applications where the powder's dark colour and rich character contribute to deep flavour development. It functions as both a flavouring ingredient and a partial natural sweetener, with a high natural sugar content (approximately 38% sugars by dry weight). No added sugar or additives. Available in 250g, 500g, 1kg, and 5kg bulk. This product is sold as a food only.

Prune Powder — FAQs

Everything you need to know before you order.

Prune powder is made from whole dried plums (prunes) ground to a fine, dispersible powder. A prune is simply a dried plum — Prunus domestica varieties selected for their suitability for drying. The key difference between the powder and whole dried prunes is format convenience: whole prunes have a dense, chewy texture with visible fruit pieces, whereas the powder incorporates invisibly into liquid and dry applications, providing the same characteristic prune flavour and natural sweetness without texture or visible fruit. Prune powder is suited to baking applications where smooth, even flavour integration is needed; smoothie and beverage formulations; dry blends; and manufacturing applications where whole fruit pieces are not desired.
Baking: prune powder works particularly well in dark, rich baked goods — chocolate cakes, brownies, and dark fruit cakes where its deep colour and flavour complement rather than contrast; in sticky date and plum puddings; in spiced fruit loaves and Christmas cake-style formulations. Moisture retention: prune powder is used commercially in baked goods as a natural moisture-retention ingredient — it slows staling in bread and cakes by binding water, which is why it appears in some commercial bakery formulations. Natural sweetener: replace a portion of refined sugar in recipes with prune powder for a darker colour and richer flavour alongside natural sweetness. Smoothies and beverages: blend into dark fruit smoothies, açaí bowls, and functional beverage powders where its deep colour and flavour add complexity. Savoury: incorporate into meat marinades, BBQ sauces, and Middle Eastern-inspired tagine bases where prune is a traditional culinary partner for lamb, beef, and chicken.
Prune powder can function as a partial natural sweetener in baking and food applications, providing sweetness from its concentrated natural fruit sugars alongside its characteristic deep prune flavour and colour. With approximately 38% natural sugars by dry weight, it is moderately sweet — less intensely sweet than date powder but with a more complex, slightly tart flavour. It is best suited as a sweetener substitute in applications where the prune's dark colour and rich flavour are a positive contribution — chocolate baking, dark fruit cakes, spiced products, and BBQ-style savoury applications. As a starting guide, replace refined sugar with approximately 1.5 times the volume of prune powder, then adjust liquid content and taste accordingly. Prune powder adds colour, so finished products will be darker than with refined sugar.
HC stocks several dried fruit powders suited to different flavour and application requirements. Prune Powder (this product, FRPRUPK1) — deep, dark, rich sweet-tart flavour; best for dark baking, chocolate applications, savoury BBQ and meat preparations, and applications where a complex, dark fruit flavour is desired. Fig Powder (FRFIGPK1) — caramel-honey sweetness; milder and more neutral than prune; suited to lighter baking and smoothie applications. Prune powder produces darker-coloured finished products than fig powder. For applications requiring a brighter fruit flavour or vivid colour, other freeze-dried powders (goji, blueberry) may be more appropriate. Contact us to discuss which format best suits your specific application.
Prune powder is hygroscopic — its high natural sugar content causes it to absorb moisture from the air, leading to clumping and caking. Store in a sealed, airtight container below 23°C in a cool, dark, dry location. Minimise air exposure each time you access the product — open, take what you need, and reseal immediately. In humid environments, a food-safe silica gel desiccant sachet inside the storage container helps maintain powder flow. Clumped powder can generally be broken apart without quality loss; mould growth or off-odour indicates spoilage. Refrigeration is acceptable for extended storage; allow the sealed container to return to room temperature before opening to prevent condensation.
