About

The Herbal Connection's Green Peppercorns are the unripe, dried berries of the Piper nigrum vine, harvested green and freeze-treated whole to preserve their fresh, slightly herbaceous heat. Milder and more delicate than black pepper, they bring a bright, tangy pop to sauces, marinades and classic dishes like steak au poivre vert. Sourced from India and supplied in convenient wholesale pack sizes, they're a versatile, premium-grade pepper for foodservice kitchens, spice blenders and retailers.

As always, it's advisable to consult with healthcare professionals for personalised guidance on health concerns.

Directions of Use

Whole and unground, these peppercorns hold their flavour and aroma well before use — crack, crush or infuse as needed.

1. Sauces & Pâtés: Crush lightly and stir into cream or brandy-based sauces, such as steak au poivre vert, for a fresh, tangy heat.

2. Marinades & Rubs: Crack whole peppercorns and combine with oil, herbs and citrus for a milder alternative to black pepper.

3. Pickling & Brining: Add whole to pickling brines or vinegars for a bright, aromatic finish.

4. Infusions & Stocks: Simmer whole in stocks, broths or spirit infusions, then strain before serving.

5. Table Grinding: Grind fresh in a pepper mill for a milder seasoning than black pepper.

Green Peppercorns — FAQs

Answers to the most common questions about cooking with whole green peppercorns.

Green peppercorns are the unripe berries of the Piper nigrum vine, picked while still green and then dried whole to lock in their colour and bright, fresh heat — unlike black pepper, which is picked slightly riper and dried until it darkens.
Whole dried green peppercorns like ours are freeze-treated and air-dried, giving a firmer texture and concentrated flavour that's ideal for grinding or cracking. Green peppercorns in brine are packed fresh in liquid and stay soft, which suits dishes like steak au poivre vert where a softer, juicier peppercorn is wanted.
Both come from the same Piper nigrum plant, but green peppercorns are harvested earlier and have a milder, fresher, slightly tangy flavour, while black peppercorns are left to mature and dried longer for a stronger, more pungent bite.
Green peppercorns have a noticeably milder heat than black pepper, with a fresh, herbaceous, slightly citrusy flavour rather than a sharp bite — many cooks use them where they want pepper's aroma without overpowering heat.
Yes — whole green peppercorns can generally replace black pepper in most recipes, though because their flavour is milder, you may want to use a little more to reach the same intensity.
Crack or crush them into cream and brandy-based sauces, add whole to marinades, rubs, pickling brines and stocks, or grind fresh at the table for a milder alternative to black pepper.
Our green peppercorns are grown and harvested in India, one of the world's major pepper-growing regions, before being freeze-treated and dried for food safety.
Store in a cool, dry place away from direct sunlight, ideally in an airtight container once opened, to help preserve their colour, aroma and flavour for longer.
