Lemon Peel Ground Organic — Citrus limon, India

Certified Organic Lemon Peel Ground Powder (Citrus limon) — the outer peel of the lemon dried and ground to a fine powder, sourced from organic lemon orchards in India. India is one of the world's major lemon producers, with significant cultivation in Maharashtra, Andhra Pradesh, and Gujarat. The outer peel (flavedo) of the lemon contains the fruit's essential oil in oil glands — it is this layer, and not the white pith beneath it, that carries the characteristic bright, aromatic, intensely citrusy character of lemon zest. Ground lemon peel delivers this character in a shelf-stable, immediately usable powder that requires no zesting, measuring or preparation.

Ground organic lemon peel has a bright, tangy, strongly citrusy character with the characteristic aromatic complexity of lemon essential oil alongside natural tartness from the dried citric acid compounds in the peel. It is more intense and aromatic than commercial lemon juice powder and contributes both flavour and visual appeal (fine yellow-green flecks) to applications. Used in tea blending, spice rubs, baking, confectionery, seasoning blends, and marinades. 100% lemon peel with no additives. Freeze-treated to reduce the risk of insect contamination. Available in 250g, 500g, 1kg, and 5kg bulk. This product is sold as a food only.

⚠ New Zealand Buyers: Please check current MPI (Ministry for Primary Industries) import rules for dried citrus peel from India before purchasing. Biosecurity restrictions may apply. It is your responsibility to confirm import eligibility prior to ordering.

Lemon Peel Ground Organic — FAQs

Everything you need to know before you order.

Both products are made from the same part of the same fruit — the dried outer peel of Citrus limon — but in different particle sizes suited to different applications. Lemon Peel Cuts (HTO.LEMPK1) — larger, irregular pieces of dried peel; primarily suited to tea blending and infusion applications where the pieces steep in liquid and are then removed or left visible in the blend for visual appeal; also used in mulling spice mixes and citrus-infused products where visible peel pieces are desired. Lemon Peel Ground Powder (this product, HTO.LMPGK1) — fine powder; suited to applications where the lemon character needs to integrate invisibly — baking batters, spice rubs, seasoning blends, marinades, and applications where whole peel pieces would be texturally inappropriate. Both are certified organic from India. Choose cuts for infusion/visible; choose powder for smooth incorporation.
Baking: fold into lemon cake, muffin, and biscuit batters — ground lemon peel integrates seamlessly and provides authentic lemon character that lemon juice alone cannot, because it carries the aromatic essential oil alongside tartness. Classic applications include lemon drizzle cake, lemon tart, lemon shortbread, and lemon poppy seed muffins. Spice rubs and seasonings: blend into dry rubs for chicken, fish, and seafood; combine with herbs (thyme, rosemary, parsley), salt, and pepper for a versatile citrus seasoning. Tea blending: a small quantity of ground lemon peel adds bright citrus character to herbal tea blends — use sparingly as the flavour is concentrated; it pairs particularly well with ginger, peppermint, chamomile, and hibiscus. Pasta and risotto: the classic Italian combination of lemon zest with pasta and seafood translates well to the powder form. Confectionery: blend into chocolate coatings, truffle ganache, and citrus-flavoured confectionery. Marinades and dressings: whisk into citrus vinaigrettes and marinades for fish and poultry.
Ground lemon peel can substitute for fresh lemon zest in most recipes, with some practical differences to keep in mind. Flavour intensity: ground dried peel is more concentrated than fresh zest — as a starting guide, use approximately half the volume of ground peel compared to fresh zest called for in a recipe (e.g. if a recipe calls for 1 tablespoon of fresh zest, start with ½ teaspoon of ground peel and adjust to taste). Texture: fresh zest has moisture and a slightly coarser, oilier texture that integrates differently in batters; ground powder is dry and very fine. In most baked goods this difference is negligible. Aromatics: fresh zest has a brighter, more volatile aroma that dissipates quickly; dried peel has a slightly more cooked, deeper citrus note — both are excellent but slightly different. Convenience: ground peel is ready to use with no preparation required, shelf-stable for 2+ years, and consistent in flavour intensity across batches — advantages that fresh zest cannot offer at scale.
India is one of the world's top three lemon and lime producers by volume, with commercial cultivation concentrated in Maharashtra, Andhra Pradesh, Telangana, and Gujarat. The warm subtropical climate and well-established citrus growing regions produce lemons year-round, supporting a consistent supply of high-quality dried peel. Indian lemon cultivation for the organic export market is well developed, with certified organic production from farms operating under international organic standards. The combination of production scale, established supply chains, and certified organic availability makes India a leading source for organic lemon peel ingredients.
Store in a sealed, airtight container below 23°C in a cool, dark location. The essential oils in lemon peel are volatile and will dissipate more rapidly with heat, light, and air exposure — all three accelerate flavour loss. A dark glass jar with a tight-fitting lid is ideal for preserving the aromatic character long-term. Avoid storing near heat sources such as ovens, stovetops, or in sunny pantry positions. Under correct storage conditions, ground lemon peel retains good flavour for 2+ years, though aromatic intensity does gradually diminish over time — use older stock in more forgiving applications (marinades, rubs) where precision is less critical, and reserve freshest stock for delicate baking applications.
The standard sizes listed — 250g, 500g, 1kg, and 5kg — are our regular stocked wholesale pack sizes, but The Herbal Connection is a wholesale supplier and can accommodate bulk orders well beyond these standard sizes.
