Kakadu Plum (Terminalia ferdinandiana) is a small deciduous tree native to the tropical savanna woodlands of northern Australia — primarily the Northern Territory and the Kimberley and Pilbara regions of Western Australia, with populations also found in Queensland. It produces small, pale green fruit roughly the size of an olive. The tree is known by many names across different Aboriginal language groups — Gubinge in the Kimberley, Murunga and Mador in parts of the Northern Territory — reflecting its widespread importance across the cultures of northern Australia's First Peoples, who have used it as a food source, bush medicine, and trade item for tens of thousands of years. Today it is one of the most commercially significant species in the Australian native food industry.
Kakadu Plum contains one of the highest recorded concentrations of naturally occurring Vitamin C (ascorbic acid) of any food source on earth — with published research reporting levels between 2,300 and 3,150mg per 100g of fresh fruit, compared to approximately 50–60mg per 100g in orange. This is a natural characteristic of the species. The Vitamin C concentration in powder form varies depending on processing method — freeze-drying preserves more than heat-based drying. Avoid heating the powder to maximise retention.
Beyond its Vitamin C content, Kakadu Plum contains high concentrations of ellagic acid and gallic acid — polyphenolic compounds that are the subject of significant research interest — as well as flavonoids, lutein, and various other naturally occurring antioxidant compounds. Its total antioxidant capacity as measured by ORAC and other methods is among the highest recorded for any fruit globally. It also contains a broad spectrum of phytochemicals whose individual properties are still being characterised by researchers in Australia and internationally.
Start with ¼ teaspoon — the powder is potent and intensely tart. Blend into smoothies, juices, or cold water; stir into yoghurt, overnight oats, or cereal; mix into cold dressings and sauces; incorporate into supplement powder formulations; use as a finishing element in confectionery and desserts. Avoid heating wherever possible — Vitamin C degrades at elevated temperatures, so cold or room-temperature applications preserve the most nutritional value.
Several factors drive the premium. Supply is inherently limited — much of the harvest comes from wild stands in remote northern Australia rather than commercial orchards, making large-scale supply difficult to guarantee. The fruit-to-powder conversion ratio is high. Harvesting is labour-intensive and often conducted by remote Aboriginal community enterprises in difficult access conditions. And there is no cheaper international alternative — authentic Terminalia ferdinandiana is exclusively Australian and cannot be replicated by other fruit powders.
