It produces large, deeply pigmented, dark-purple fruit — visually striking, with a deep crimson flesh — that is intensely tart and sour. Unlike conventional plums (Prunus spp.), Davidson Plum is botanically unrelated, belonging to the family Davidsoniaceae. It has long been used as a traditional food by Aboriginal peoples of the rainforest country of south-east Queensland, and in more recent decades has become one of the most prized ingredients in Australian native food product development — particularly in premium jams, sauces, confectionery, and native food beverage ranges — primarily for its extraordinary colour and its complex, deeply tart flavour.
Davidson Plum's dramatic deep purple colour comes from an exceptionally high concentration of anthocyanins — water-soluble pigment compounds from the flavonoid family that produce red, purple, and blue colours in plants. Davidson Plum is among the highest-recorded natural sources of anthocyanins of any Australian fruit, with some research reporting concentrations significantly above those of blueberries, acai, and elderberry. Anthocyanins are pH-sensitive — the powder will shift from purple-red to blue in alkaline environments and intensify in acidic ones, which is useful to understand for baking and beverage applications where pH varies.
Davidson Plum is primarily used as both a flavour and colour ingredient — the two attributes are inseparable.
