Harvested from the delicate inner bark of the tree and hand-rolled into multi-layered quills, this is the authentic Ceylon variety. It boasts a sweet, complex, and floral flavour, and contains virtually no coumarin, unlike common Cassia cinnamon.

Directions of Use

These quills are for infusion and should be removed before serving.

1. Add one quill to curries, stews, or rice pilafs as they simmer to infuse a delicate, warm flavour.

2. The essential ingredient for mulled wine, hot apple cider, or a pot of authentic chai tea.

3. Use a whole quill as a fragrant stirrer for lattes or hot chocolate.

4. Break apart and grind in a spice grinder for the freshest, sweetest, low-coumarin cinnamon powder.

5. Simmer with fruit (like apples or pears) to create a fragrant compote.

What's the difference between Cinnamon Quills (Ceylon) and regular cinnamon (Cassia)?

The main differences are flavour and safety. Quills (Ceylon) are sweet, floral, and delicate. Regular cinnamon (Cassia) is spicy, pungent, and 'hot.' Most importantly, Cassia contains high levels of coumarin, which can be toxic to the liver. Ceylon quills contain almost no coumarin.
