Cinnamon Myrtle is a member of the Myrtaceae family — the same botanical family as Lemon Myrtle and Aniseed Myrtle — and like its relatives, the culinary and aromatic character comes primarily from its essential oil-rich leaves. The dominant compound in Cinnamon Myrtle is methyl cinnamate, which gives the leaves their characteristic warm, sweet, cinnamon-like aroma and flavour with subtle spicy depth. Unlike true cinnamon (Cinnamomum species), Cinnamon Myrtle is a leaf rather than bark, and its flavour profile is softer and sweeter — more reminiscent of a blend of cinnamon and clove with a eucalyptus-like freshness underneath.
