One of the most aromatic of Australia's native culinary botanicals, Aniseed Myrtle derives its distinctive character from a high concentration of anethole — the same essential oil compound responsible for the flavour of star anise, fennel, and traditional aniseed — but delivered through a native Australian leaf rather than an imported seed or bark. The result is a sweeter, cleaner, more rounded licorice character with none of the bitterness sometimes associated with star anise, and a fresh herbal freshness that is distinctly Australian.

Aniseed Myrtle (Syzygium anisatum) is a native Australian rainforest tree leaf from northern NSW and south-east Queensland, also known by its old common name Ringwood. Traditional aniseed (Pimpinella anisum) is an annual herb seed from the Eastern Mediterranean. Both contain anethole as their primary aromatic compound — the same compound also found in star anise (Illicium verum) and fennel — but the Australian leaf delivers it in a distinctly different way. Aniseed Myrtle is sweeter, cleaner, and less bitter than star anise, without any of the heavy, sometimes medicinal quality that star anise can carry. The freshness of the native leaf gives it a bright, herbal quality on top of the licorice base that makes it considerably more versatile in both culinary and beverage applications.
Add 1 teaspoon of flakes to a cup of freshly boiled water. Steep for 3–5 minutes covered — covering the cup retains the volatile anethole aromatic oils that would otherwise escape as steam. The resulting infusion is pale golden with a sweet, clean licorice character and a natural brightness from the leaf. No added sweetener is needed — the natural anethole reads as inherently sweet on the palate. Can be enjoyed hot or cooled and served over ice. Blends well with Lemon Myrtle for a citrus-anise combination, or with Cinnamon Myrtle for a warm spice-anise blend.
