Its intense sweetness comes from a group of compounds called mogrosides — primarily Mogroside V — which are present in significant concentrations in the fruit's juice but at much lower levels (~1%) in the whole dried fruit.

What makes this product different: most commercially available monk fruit products are made from concentrated juice extract — the juice is extracted, the mogrosides are concentrated (often to 10–50% Mogroside V), then the extract is spray-dried, almost always onto a maltodextrin or erythritol carrier to create a free-flowing white powder. The result is a product that is intensely sweet (often 150–300× the sweetness of sugar) but contains significant amounts of carrier ingredients, and is white rather than the fruit's natural colour. The result is a white or off-white powder that is roughly 150–300 times sweeter than sugar by weight and contains substantial carrier ingredients. Whole monk fruit powder (this product) — the entire dried fruit is simply ground to a powder. No extraction, no concentration, no carriers. Mogroside V content is approximately 1% — reflecting its natural concentration in the whole fruit. The powder is brown (natural fruit colour), moderately sweet rather than intensely so, and the ingredient list is purely the whole fruit. It is a whole food ingredient rather than a concentrated extract.
The white appearance of most commercial monk fruit powders is a result of processing and additives, not a natural characteristic of the fruit.
