Despite its common name, Strawberry Gum is botanically a eucalyptus — not a myrtle or a berry plant — and its remarkable aromatic character comes from a combination of methyl cinnamate and linalool, two naturally occurring essential oil compounds that together produce a flavour profile simultaneously reminiscent of strawberry, tropical fruit, and warm cinnamon-spice. The result is unlike anything else in the native food pantry: intensely sweet, distinctly fruity, and arrestingly aromatic.

Strawberry Gum (Eucalyptus olida) is a small to medium eucalyptus tree with a naturally limited range in the high-altitude tablelands of northern New South Wales — making it one of the rarer native culinary botanicals in commercial production. Despite the name and its fruit-like aromatic character, it is botanically a eucalyptus — part of the same genus as the iconic Australian gum trees — and completely unrelated to strawberries. Its extraordinary flavour comes from a combination of naturally occurring essential oil compounds, primarily methyl cinnamate (also found in Cinnamon Myrtle) and linalool (a floral, fruity terpene alcohol found in lavender and many tropical fruits), which together create a uniquely sweet, fruity, cinnamon-tinged character unlike any other culinary herb.
Strawberry Gum has an exceptionally high essential oil content relative to its leaf mass — significantly more concentrated than most other native culinary leaves. A very small amount delivers a pronounced aromatic impact that can quickly become overwhelming if over-used. For tea, ¼ to ½ teaspoon per cup is sufficient. In cooking, start with a pinch — approximately 4–6 flakes — and taste before adding more. In confectionery or fine dining applications, infuse into a liquid (cream, sugar syrup, custard) and taste during infusion rather than adding a set amount, as concentration increases rapidly with heat and time. It is significantly more potent than Cinnamon Myrtle or Aniseed Myrtle.
Strawberry Gum excels in applications where a small quantity provides significant aromatic impact. Desserts and confectionery: infuse into panna cotta, crème brûlée, ice cream base, or cream for cakes and tarts; fold into white chocolate ganache; use to flavour macarons and marshmallows. Baking: add a pinch to shortbread, sponge cakes, muffins, and native-flavoured biscuits. Beverages: steep briefly in sugar syrup for cocktail and mocktail applications; infuse into sparkling water for a native botanical soda; use as a tea steeped for a short time. Savoury: works surprisingly well in duck and game bird marinades and glazes, and with soft cheeses and charcuterie. Distillery: a sought-after botanical for premium native Australian gin and spirits — its intensely fruity character adds a distinctive aromatic layer.
All three are Australian native aromatic leaf botanicals, but from different botanical families with distinct compound profiles. Cinnamon Myrtle (Backhousia myrtifolia) and Strawberry Gum (Eucalyptus olida) both contain methyl cinnamate as a key compound — which is why they share a warm, cinnamon-adjacent note — but Strawberry Gum also contains high linalool, which pushes it into fruity-floral territory that Cinnamon Myrtle doesn't reach. Aniseed Myrtle (Syzygium anisatum) is dominated by anethole — entirely different. Strawberry Gum is the most potent and aromatic of the three and requires the most care in application. In native food product development, the three are often used together to build a layered Australian botanical flavour profile.
