Directions of Use

Homemade Gin Recipe (without a still)

1. Rinse a handful of juniper berries under cold water to clean them.

2. Place the juniper berries in a glass jar or bottle. Add other botanicals for more flavours, such as Lemon Peel for a citrus tone.

3. Pour your preferred alcohol base (such as a flavourless vodka) over the juniper berries, ensuring they are fully submerged.

4. Seal the jar or bottle tightly and store it in a cool, dark place for at least one week to allow the flavors to infuse.

5. After the desired infusion period, strain the liquid to remove the juniper berries and enjoy your homemade flavored spirit!

Juniper Berries (Juniperus communis) — whole dried berries from Macedonia, the most widely cultivated and commercially traded variety of the common juniper. Botanically speaking, juniper "berries" are not true berries — they are the fleshy, merged seed cones of the juniper plant, which develop their characteristic berry-like appearance as the cone scales fuse and ripen over two to three years. Juniperus communis is the species used across virtually all culinary and distillery applications, prized for its sharp, resinous, piney flavour with distinct notes of citrus, pine, and a dry peppery warmth that are the unmistakable signature of gin.

These Macedonian berries are characteristically smaller and more oil-rich than the jumbo Albanian berries also available in the HC range — the smaller berry size indicates a higher essential oil concentration relative to berry volume, which many distillers and culinary professionals prefer for the intensity of flavour extraction they produce. The berries still contain the aromatic essential oils in the fruit — visible as an oily, resinous character when the berry is crushed. No known allergens. Available in 250g, 500g, 1kg, and 5kg. Juniper berries have one of the most distinctive and immediately recognisable flavour profiles in the botanical world — sharp, resinous, and piney, with a complex layering of citrus zest (particularly lemon and orange), dry pepper, and a clean, almost cooling pine character. This profile is the defining flavour of gin — juniper is the mandatory primary botanical in all legally classified gin — and once you know the flavour, it is unmistakable. The raw berry has a very strong, rather bitter and astringent flavour that mellows significantly when cooked or infused. Crushing the berries before use breaks the outer skin and dramatically intensifies the aromatic oil release, producing a much more pronounced flavour. The Macedonian berries are smaller than Albanian jumbo berries but correspondingly more oil-concentrated — a small number of berries per dish or infusion is typically sufficient.
Juniper is the legally mandated primary botanical in gin — under both Australian and international standards, a spirit must have a predominant juniper flavour to be classified and labelled as gin. In distillery production, juniper berries are typically included in the botanical basket of a pot still and the vapour from the base spirit passes through the botanicals during distillation, extracting the aromatic compounds. Crushing the berries before placing them in the basket releases more of the essential oils and produces a more expressive juniper character. For cold compounding (making gin without distillation by macerating botanicals directly in neutral spirit), whole crushed juniper is macerated in high-proof neutral grain spirit for 24–48 hours or longer before blending with other botanical infusions. The smaller Macedonian berry size relative to Albanian jumbo berries can be an advantage in basket distillation — smaller berries pack more efficiently and provide greater surface area for vapour extraction. Juniper is one of the classic spices of northern and central European cuisine, particularly for game and rich meat preparations. Game meats: juniper is the traditional pairing for venison, wild boar, pheasant, and duck — typically 4–8 crushed berries per dish (serving 4–6) added to braises, slow-cooked stews, and marinades. Pâtés and terrines: a small number of crushed berries in the forcemeat seasoning adds the classic Scandinavian/European character to game pâtés. Brines and marinades: include crushed berries in curing brines for red meat and game, and in pickling brines for vegetables. Sauerkraut and fermented vegetables: a traditional addition to sauerkraut and pickled red cabbage in German and Alsatian cooking. Sauces: crush and add to pan sauces and gravies for game, pork, and dark meat. Always crush before use — whole berries provide very little flavour extraction. Use sparingly; juniper is potent and too many berries produce an unpleasantly medicinal result.
Yes — crushing is strongly recommended for almost all applications. The outer skin of the dried berry is tough and relatively impermeable; whole uncrushed berries release their flavour slowly and incompletely. Crushing — either with the flat side of a large knife pressed firmly down on the berry, or with a mortar and pestle — breaks the skin and exposes the aromatic resinous interior, dramatically increasing the speed and intensity of flavour extraction in both cooking and infusion. For cooking applications, lightly crushing (just cracking the skin) is typically sufficient. For distillery and infusion applications, a more thorough crush produces maximum surface area and oil exposure. For gin cold compounding, some distillers go further and coarsely grind the berries before maceration. Do not crush too far in advance of use — once crushed, the volatile aromatic oils begin to dissipate, so crush just before adding to the recipe or infusion vessel.

The choice between the two largely comes down to whether certified organic status is required, and whether smaller oil-concentrated berries or larger visually impressive berries better suit the application.
