Moroccan Mint Tea — known locally as Atay — is a sweet, strongly-brewed green tea combined with fresh spearmint that holds a place of extraordinary cultural significance in Morocco and across the Maghreb. Traditionally prepared with Chinese Gunpowder green tea and large bunches of fresh nana (spearmint) leaves, it is ritually poured from a height to create a frothy head and typically offered in three glasses to guests — an expression of hospitality, friendship, and time. The tradition of mint tea in North Africa is believed to date back to at least the mid-19th century when green tea was first introduced via trade.
Yes — Green Tea Sencha (Camellia sinensis) is naturally caffeinated. Green tea generally contains less caffeine than black tea but more than herbal tisanes. The peppermint and spearmint components are caffeine-free. This blend is not suitable for those avoiding caffeine entirely, though the caffeine level is moderate.
Both are members of the Mentha genus but have distinctly different flavour profiles. Peppermint (Mentha piperita) contains high concentrations of menthol — the compound responsible for its intensely cool, sharp, almost medicinal character. Spearmint (Mentha spicata) contains carvone rather than menthol, giving it a sweeter, softer, rounder mint flavour without the sharp cooling punch of peppermint. Using both in this blend creates a more nuanced mint experience — the peppermint provides the bold, cooling burst, and the spearmint rounds and softens the finish.
Mint has been used across virtually every major culinary and medicinal tradition in the world. In ancient Greece and Rome, it was used to flavour sauces and as a digestive herb. In traditional Ayurvedic and Chinese medicine, both peppermint and spearmint feature as digestive and respiratory botanicals. In the Middle East and North Africa, spearmint is the essential flavour in tea culture. In European herbal medicine, peppermint has been used since at least the 18th century as a carminative — a herb used to ease digestive discomfort — and is one of the most widely consumed herbal teas globally.
Yes — all three ingredients are certified organic. The blend is made in-house at The Herbal Connection using local and imported certified organic ingredients. The Herbal Connection is a Certified Organic business operating from our 5-Star Eat Safe licensed facility on the Gold Coast.
Add one teaspoon per 200ml to a teapot or infuser. Use water at around 75–80°C — not fully boiling, as this can make the green tea bitter and over-extract the mint. Steep for 3–4 minutes and strain. The blend brews to a pale golden-green with a clean, bright mint aroma. Excellent hot or served over ice with a wedge of lemon. Store below 23°C in a dark, airtight container — green tea and mint are both sensitive to heat, light, and moisture.
