The whole fruit is used — skin, flesh, and seeds — producing a powder that captures the complete flavour profile of the dried fig. The milling process creates a fine, dispersible powder that behaves quite differently from diced or whole dried figs: it incorporates smoothly into liquid bases, batters, and dry blends without visible fruit pieces, and its concentrated flavour and sweetness mean a smaller quantity is needed to achieve the same flavour impact as diced figs. The natural sugars in the fruit (predominantly fructose and glucose) become highly concentrated in the powder, making it noticeably sweet.
Baking: fold into muffin, cake, and bread batters where invisible fig flavour and sweetness is desired without visible fruit pieces; use in fig-flavoured biscuits and shortbreads; blend into sticky date and fig-style pudding bases. Smoothies and beverages: stir or blend into smoothies, protein shakes, and functional beverages for natural fig flavour and sweetness without the texture challenges of whole diced figs. Natural sweetener substitute: replace a portion of refined sugar in recipes with fig powder — the natural fructose and glucose provide sweetness along with the fig's concentrated flavour. Use as a 1:1 volume substitute for icing sugar in some applications. Energy balls and bars: blend with other powders, oats, and nuts for no-bake energy balls where a smooth, homogeneous texture is preferred over the diced fig format. Both are made from the same fruit — dried Ficus carica — but in different formats suited to different applications. Diced Dried Figs (FRFDDK1) — visible pieces with a chewy, dense texture; used where the physical presence of fig pieces is desired in the finished product (baking, granola, trail mix, salads, energy balls). The diced format provides texture contrast and visual appeal. Fig Powder (this product, FRFIGPK1) — fine, fully dispersible powder; used where invisible integration is desired (smoothies, batters, beverage powders, seasonings, natural sweetener applications). The powder format provides more even flavour distribution without texture contrast, and its higher surface area-to-volume ratio gives it a more immediate flavour release in liquid applications. Choose diced for visible fig and textural interest; choose powder for seamless integration and smooth applications.
Fig powder is highly hygroscopic — it absorbs moisture from the air readily due to its very high natural sugar content, causing clumping and caking. Proper storage is essential. Store in a sealed, airtight container below 23°C in a cool, dark, dry location. Minimise air exposure when accessing the product — take out what you need and reseal immediately. In humid environments (particularly Queensland summers), consider adding a food-safe silica gel desiccant sachet to the storage container. If the powder has clumped, it can generally be broken apart with gentle pressure — clumping alone does not indicate spoilage, but mould growth or off-odour does. Refrigeration is acceptable for long-term storage; allow the sealed container to return to room temperature before opening to prevent condensation on the cold powder.
Fig powder can function as a partial natural sweetener substitute in baking and food applications, providing sweetness from its concentrated natural fruit sugars alongside a distinctive fig flavour. It is not a like-for-like substitute for refined sugar in all contexts — it adds flavour, colour (darker than refined sugar), and moisture-binding properties that refined sugar does not, and is less sweet per gram than sucrose. It works best in applications where a fig flavour is a positive addition, such as fig-and-walnut baked goods, spiced cakes, smoothies, and energy ball formulations. As a rough guide, use approximately 1.25–1.5 times the volume of fig powder compared to the sugar being replaced, then adjust other liquids and taste as needed. For applications requiring purely neutral sweetness without the fig flavour profile, fig powder is not the appropriate substitute.
