The key difference is format and application. The Chai Spice Mix uses whole and coarsely cut spices — designed to be simmered in water or milk, then strained. It also includes Black Peppercorns and Star Anise. The Chai Spiced Latte uses finely ground spices — designed to dissolve directly into milk without straining, making it ideal for café-style lattes and milk-based drinks. It replaces Black Peppercorns and Star Anise with Allspice Pimento for a smoother, rounder flavour profile.
Sri Lankan True Cinnamon (Cinnamomum zeylanicum) is botanically distinct from the more common Cassia cinnamon (Cinnamomum cassia or aromaticum) sold in most supermarkets. Also known as Ceylon Cinnamon, it originates in Sri Lanka and has been traded as a prized spice since antiquity. True Cinnamon has a softer, more delicate, subtly sweet flavour with a lighter, more complex aroma than Cassia — which is sharper and more pungent. It is the traditional cinnamon of European baking and fine spice traditions.
Allspice (Pimenta dioica) is the dried berry of a tree native to Central America and the Caribbean. Its name comes from its flavour profile — it tastes like a combination of cloves, cinnamon, and nutmeg all in one spice. It has been used in Caribbean, Middle Eastern, and European cooking for centuries and was brought to Europe by Spanish explorers in the 16th century. In this blend, Allspice contributes a complex, layered warmth that enriches the overall spice character without adding sharp heat.
