Daintree Tea is grown in the rainforest-adjacent region of Far North Queensland — the only place in Australia where Camellia sinensis is commercially cultivated at scale. The combination of tropical climate, high rainfall, and rich red volcanic soil produces a tea with a character that is distinctly different from Indian or Sri Lankan black teas — full-bodied and malty with a clean, slightly earthy finish. The Daintree tea used in this blend is grown on a spray-free farm, making it an excellent quality Australian-origin black tea base for chai.
Yes — Daintree Black Tea (Camellia sinensis) is naturally caffeinated. The caffeine level is moderate, in line with a standard cup of black tea, and will increase with longer steeping times. The chai spices contain no caffeine. This blend is not suitable for those avoiding caffeine.
Yes — Ginger contains naturally occurring sulphites. Sulphites are one of the 14 major food allergens declared under Australian food standards. If you or your customers have a sulphite sensitivity, please take note. The Herbal Connection makes no allergen-free claims and notes that trace elements from farming practices may also be present.
Chai — from the Hindi word for "tea" — has its roots in the Indian subcontinent, where spiced beverages have been prepared for thousands of years in Ayurvedic tradition. The specific combination of spices known as masala chai developed over centuries along ancient spice trade routes. The addition of black tea and milk became widespread in the 19th century, giving rise to the chai latte format widely consumed globally today. This blend takes that tradition and roots it firmly in Australia with a locally grown black tea base.
Including both whole pods and loose seeds gives the blend a layered cardamom character. The whole green pods release their flavour slowly and steadily during steeping or simmering, contributing a rounded, aromatic depth. The whole seeds — exposed without the pod — release more quickly and provide an immediate, bright, intensely fragrant hit. Together they create a more complex, authentic cardamom presence than either form alone.
Traditional method: Add 1–2 teaspoons to a saucepan with 1 cup of water. Bring to a boil, then simmer for 3–4 minutes. Add 1 cup of milk (dairy or plant-based) and simmer for a further 2–3 minutes. Strain and sweeten to taste. Quick method: Add 1–2 teaspoons to a teapot or infuser. Pour freshly boiled water over the blend and steep for 4–6 minutes. Strain and enjoy with or without milk. The whole spices benefit from a longer brewing time to fully release their flavour. Store below 23°C in a dark, airtight container.

Store below 23°C in a sealed, dry, dark container. The whole spices are highly aromatic — seal tightly after each use to preserve their essential oils. The black tea base is also sensitive to moisture, heat, and strong odours. When stored correctly, the blend maintains its quality for up to 24 months.
